Toasted Coconut Chocolate Chunk Cookies

- Serves: 25 cookies
- Prep Time: 30 minutes
- Total Time: 40 minutes

Ingredients
- 1 cup sweetened flaked coconut
- 4 1/2 all-purpose flour (about 1 cup)
- 1/2 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/8 teaspoon salt
- 3/4 cup brown sugar (packed)
- 1/4 cup unsalted butter (softened)
- 1 teaspoon vanilla extract
- 1 large egg
- 2 oz. dark chocolate
- chopped
- cooking spray
Instructions
Preheat oven to 350 degrees.
To toast coconut: Lay coconut on a cooking sheet. Bake at 350 degrees for about 7 minutes or until lightly toasted, stirring once. Set this aside to cool.
Sift the flour into a measuring cup, level with a knife. Combine baking powder, baking soda and salt in a medium bowl; stir with a whisk until well blended. Add sugar and butter in a large bowl, and beat with a mixer at medium speed until well blended. Beat in vanilla and egg. Add the flour mixture at low speed until combined. Add the toasted coconut and chocolate.
Drop dough by Tablespoons onto greased cookie sheet. Keep them about 2 inches. Bake at 350 degrees for 10 minutes. Remove from pan and cool completely on wire racks.
Chewy Chocolate Cookies

- Serves: 4 1/2 dozen
- Prep Time: 15 minutes
- Total Time: 45 minutes
This is a family favorite!
Ingredients
- 1 1/4 cup butter or margarine softened
- 2 cups sugar
- 2 eggs
- 2 tsp. vanilla
- 2 cups unsifted all-purpose flour
- 3/4 cups cocoa
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1 cup chocolate chips
Instructions
Cream butter and sugar in a mixing bowl. Add eggs and vanilla and blend well.
In a separate bowl, combine dry ingredients. Gradually blend into creamed mixture.
Stir in chocolate chips.
Drop by teaspoonfull onto ungreased cookie sheet.
Bake at 350 for 8 to 9 minutes.

Chocolate Chip Cookie Dough Ball
variation of the classic cheese ball

- Prep Time: 10 minutes
- Total Time: 10 minutes
Try this sweet and tasty variation of a "cheese" ball with some shortbread cookies, graham crackers, or another of your favorites! This can also be found on Food.com
Ingredients
- 1/2 cup butter
- 2 Tablespoons brown sugar
- 1/4 teaspoon vanilla
- 8 oz. cream cheese
- 3/4 cup confectioner's sugar
- 3/4 cup mini chocolate chips
- 3/4 cups pecans
- finely chopped (optional)
Instructions
Melt butter in a saucepan over low heat. Add brown sugar and stir until it melts. Remove from heat and whisk in vanilla. Let cool.
In a separate bowl, beat cream cheese and confectioner's sugar for about 1 minute. Then beat in butter mixture for 1 minute.
Stir in chocolate chips.
Place the mixture onto a piece of wax paper and form into a ball.
Refrigerate for 1 hour and then roll ball in pecans.
Serve to the grateful public!

- I remember my Grandma always put her cookies in a ziploc bag with a slice of bread. She always had the most delicious cookies!

Monster Cookies
A Large Batch!

- Serves: 12 dozen
- Prep Time: 15 minutes
I have used this recipe from a local Church Cookbook and it's heavenly! This is a recipe for the big party, the bake sale, or if you are feeling extremely hungry for a Monster Cookie!

Ingredients
- 12 eggs
- 2 lbs. brown sugar
- 4 c. white sugar
- 1 T. vanilla
- 8 tsp. baking soda
- 1 lb. butter (don't substitute)
- 3 lbs. peanut butter
- 18 c. oatmeal
- 1 lb. chocolate chips
- 1 lb. M & M's (plain)
Instructions
Mix all together.
Drop by large tablespoon or ice cream scoop.
Flatten.
Bake 12 minutes at 350 degrees.
Don't overbake!
Chocolate No-Bake Candy Cookies
With a few variations
From a local charity cookbook.
Maple No-Bake Candy Cookies: Can be made from the same recipe, omitting cocoa, sugar, and vanilla, and adding 2 cups firmly packed brown sugar and 1 Tablespoon orange rind.
Candied Popcorn: Can be made from this recipe omitting oats, coconut, and walnuts.
Strawberry Popcorn: Made with this recipe using Nestle's Strawberry Quick instead of cocoa.
Ingredients
- 3 cups uncooked quick oats
- 1/2 cup coconut
- 1/2 cup chopped walnuts
- 1/2 cup cocoa or Nestle's chocolate milk mix
- 1/2 cup undiluted evaportated milk
- 1/2 cup butter
- 2 cups sugar
- 1/4 tsp. vanilla
Instructions
Mix together oats, coconut, and nuts in a large bowl.
Combine cocoa, milk, butter, and sugar in a saucepan. Cook over medium heat, stirring constantly until it reaches a full boil. Continue boiling for 1 minute.
Remove from heat, add vanilla.
Pour over dry mixture. Mix with fork until mixture is well coated.
Drop from teaspoon to waxed paper. Work rapidly. Let stand until firm.
Makes about 50 cookies.
Easy Chocolate Drop Cookies
A delicious morsel

- Serves: 4 dozen
From a local charity cookbook.
Ingredients
- 1/2 cup margarine
- 1/2 cup shortening
- 1 1/2 cups sugar
- 2 eggs
- 4 Tablespoons cocoa
- 3 1/2 cups flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 cup milk
- 2 teaspoons vanilla
Instructions
Mix all ingredients together very well. Drop by teaspoonful on ungreased cookie sheet. Bake for 8 to 10 minutes at 375 degrees.

- Had to come back and tell you they turned out amazing. I brought them to work as a birthday treat and they were devoured. I found that they were best a little underdone. My husband kept telling me they didn't look done and the one batch I let him sway me to let them go longer wasn't nearly as yummy. They did almost look raw coming out of the oven but they set up while cooling.
