Lemon Chocolate Cookies Recipe

These chocolate cookies are baked in an 8" square pan and only cut into squares once they are completely cold. I find them much easier than the previous chocolate cookies recipes.

Ingredients:

  • ½ Cup flour

  • ½ Teaspoon baking powder

  • ½ Teaspoon salt

  • 3 oz. Dark chocolate

  • 1/3 Cup butter

  • 2 Eggs

  • 1 Cup sugar

  • 1 Teaspoon vanilla

  • 1 Cup chopped nuts

  • Grated lemon peel of half a lemon

  • 8" Square cake tin greased.

Method for this chocolate cookies recipe:

  1. Preheat the oven to 350oF.

  2. Sift together flour, baking powder and salt together.

  3. Melt the chocolate and butter over hot water until the chocolate has melted. You have to be careful here as the chocolate burns very easy and will burn if the bowl you are melting it in touches the boiling water.

  4. Remove from the hot water.

  5. Beat the eggs well, add the vanilla ad sugar and mix well.

  6. Add the melted chocolate and mix well.

  7. Add the dry ingredients and mix well.

  8. Add nuts and lemon peel and mix well.

  9. Spread the mixture even in your cake tin.

  10. Bake for 30-35 minutes until firm to touch.

  11. Let them cool completely before cutting into squares and storing them in a cake tin.

Variation: replace the nuts with chocolate chips. This will give the end result a more "chewy" texture.

Chocolate Chip Cookies

CHOCOLATE CHIPS

Chocolate Chips are small pieces of chocolate of uniform size. They contain fewer cocoa solids than ordinary chocolate and are available in plain dark, milk and white flavors. They are designed to keep their shape without melting during baking and cannot replace cooking chocolate. This is why you will often see chocolate chips used with cocoa or chocolate.
