Chocolate Dipped Pretzels, Yum!

If you had the choice of a plain pretzel or a chocolate covered pretzel which would you choose? I'd choose chocolate any day.

We have been making these for years, but lately it seems manufacturers have caught on. Mars now sells M&M's Pretzel, and recently my mom bought me some chocolate pretzel bark from Trader Joe's. Chocolate dipped pretzels are easy to do and can be done in a variety of ways. There are a variety of pretzel shapes, and you can use white, milk, dark, or combination of chocolates. They make great gifts for Valentines Day or Christmas and are also good at bake sales. Plus they are super easy I had my girls helping while in grade school there are a few helpful tricks.

Chocolate Dipping Basics

Whether dipping pretzels or something else there are some important things to know about dipping in chocolate.

One thing you have to be careful of is seizing, this happens if you get water into your chocolate. You can also burn your chocolate if it gets to hot. If either of these happens try adding a little vegetable oil and this might fix it. It's best to avoid it by using low heat to melt the chocolate and keeping things dry when your dipping.

If you want to get technical you will also want to temper your chocolate. This will give your dipped items a nice sheen and is done with a process of heating and cooling. I have never done this though and mine has always tasted fine. Some people will us candy melts to avoid this process. Candy melts have some cocoa in them, but the fat is oil and not cocoa butter. personally I don't like the flavor of them and prefer to use real chocolate.

So the professional chocolatetier wouldn't use chocolate chips, and wouldn't use a microwave. I'm obviously not a professional because that is exactly what I do and for my purposes, Christmas gifts for friends, it works just fine. Although after doing research for this lens, I think I will stir it a little more to see if I can get more of a sheen.

Chocolate Dipped Pretzel Rods

The variety of chocolate covered pretzels are many. I've seen pretzel rods/logs at many a bake sale.

Chocolate Dipped Pretzels

Pretzels of your choosing (I like the minis the best)
Chocolate or Candy Melts (whatever you prefer)

In a dipping container (I use a 1.5 qt glass bowl) melt chocolate per package directions or the method you prefer. (See videos on this lens)
When chocolate is ready dip pretzels in chocolate. (*If covering completely using a dipping fork works best.)
Holding over the bowl allow excess to drip off, tapping on side of bowl if needed.
Lay on a cookie sheet lined with wax paper allow to harden.
If giving as a gift place in a decorative cello bag and tie with a festive ribbon.

To use up leftover chocolate add broken pretzels pieces stir and spread on wax paper for pretzel bark.

* If you don't have a dipping fork a plastic fork with the middle tongs broken off works. I like the dipping fork better because the balls at the end of the tongs keeps the pretzels from falling off when tapping off the excess.

Tools To Make The Job Easier

The dipping tools are definitely worth it. They don't cost much and they make the job much easier. If your going to do the double boiler route, a true double boiler is easier to use than a home made one, especially with chocolate. If you're going the technical route and you already have a candy thermometer use it. But, if your going to buy one might as well get digital, much easier to read. Once you've made them wrapping them attractively makes them just a little more special. If your make them for gifts, you'll want to make extras for the family. Pretty much impossible to not taste them, and once tasted, well you know, "bet you can't eat just one."

Don't Forget the Chocolate

Dark chocolate is my favorite, more chocolate flavor. Most people like milk chocolate and some like white. You can also drizzle a different chocolate over your pretzels after you dip them. I don't like candy melts, but some people do and some may need to use them because of the cost.

    I tried to make chocolate covered pretzel rods for the first time the other day and they looked great... until the next day when they all had this white speckling. What did I do wrong? I used a 23 oz bag of milk chocolate chips, 1 1/2 tsp shortening and microwaved for 30 sec at a time until there were a few chips left but I was able to stir smooth. I dipped the pretzels then set on wax paper on a baking sheet to dry and drizzled with colored chocolate. I did let them sit out over night but I put a few in a bag and those ones were discolored as well. Please Help!!!
