Cooking with Coffee and Chocolate: the results are delicious!

Chocolate Coffee Whipped Cream
This recipe will yield about two (2) cups chocolate coffee flavored whipped cream
Ingredients:
- One (1) cup heavy cream (your choice to experiment with lighter cream or yogurt, results may vary)
- 1/2 cup powdered sugar
- 1/3 cup of chocolate shavings (dark or white chocolate, your choice)
- Two (2) tablespoons concentrated coffee syrup (see recipe below)
Place the cream and sugar in a mixer bowl and beat until soft peaks form. Add the coffee syrup, mix well. Add the chocolate shavings, mix well so you have stiff peaks.
Refrigerates well and makes a surprisingly delicious topping on pancakes, waffles or on top of a warm apple pie spice.
How you make concentrated coffee syrup: One (1) to 1 1/2 cups max freshly ground gourmet coffee. Two (2) cups of water and 1/2 cup of sugar. Brew the coffee with all the water in your coffee maker as usual. Once brewed, place the brewed coffee with the sugar in a tall saucepan and bring to a boil. Keep an eye on the coffee, it can boil high and spill out. Mix regularly, reduce the heat to medium and cook for about 15 minutes or until reduced to a thick syrup. Regular stirring recommended. Set aside to cool. Refrigerate for future use in many recipes.

Coffee
A brewed beverage with a dark and acidic flavor prepared from the roasted seeds of the coffee plant called coffee beans. The beans are found in coffee cherries. The coffee bean and the cacao bean

does not have chocolate liquor and therefore is not considered real chocolate. White chocolate ingredients: Cocoa butter. Milk. Sugar. Vanilla.
Xocoatl
Original name for a beverage brewed from cocoa beans by the following ancient civilizations: The Aztecs. The Toltecs. The Mayas. The Incas. Ingredients: Cocoa. Maize (Indian corn). Water. A very stimulating drink!
Dutching
The Dutchman Coenraad Johannes van Houten discovered in the 19th century that the acid taste of cocoa was neutralized by adding alkali-potash to the nibs before they were roasted. Since that time this alkalization process has become a standard in the chocolate trade. It modifies the flavor and color of the final product and is called the "Dutch process" or "Dutching."
Bananas
The banana plant grows 10 to 26 feet and belongs to the same family as the lily and the orchid. Bananas grow in cluster of fruits yielding anywhere from 50 to 150 bananas. Individual fruits are grouped in "hands" containing 10 to 25 bananas each.
Fudge
A soft candy made of the following ingredients: Sugar. Butter. Milk. Chocolate. Nuts. Sometimes other ingredients.
Mint
Mentha is a flowering plant also known as Mint from Greek m%uFFFDntha. Mints are aromatic. They are perennial herbs. Rarely cultivated as annual herbs. The fruit is a small dry capsule containing one to four seeds. Mint is considered an invasive plant.
Chocolate mousse

The sweet orange is the most commonly grown fruit tree in the world. Ancient origin: a hybrid between pomelo (Citrus maxima) and mandarin (Citrus reticulata).
Raspberry
Also called hindberry is the edible fruit of a multitude of plant species in the genus Rubus. Raspberries are perennial plants with woody stems. Varieties of raspberries include: Black. Purple. Golden. Yellow. Red. Raspberry hybrids include: Loganberries. Boysenberrires. Tayberries.
Swiss Almond
Dry roasted almonds lightly coated with sweet chocolate and vanilla. Can have multiple variations including coconut milk and other ingredients.

A creamy combination of vodka with coffee liqueur and Irish cream liqueur for a very sweet taste.
