Chocolate Fudge Cake Recipe

Ingredients

• 4 large eggs
• 8 oz unsalted butter (softened)
• 6 oz soft dark brown sugar
• 2 oz golden syrup
• 2 oz melted dark chocolate
• 1 tsp vanilla extract
• 7 oz self-raising flour
• 1 oz cocoa
• 1/2 tsp baking powder
• 1 tbsp water
• FOR THE FROSTING
• 1/2 pint sour cream
• 14 oz melted dark chocolate

Instructions

1. Preheat oven to 190C.
2. Prepare two 8" round sandwich tins, buttered and base lined.
3. In a mixing bowl, add eggs and the golden syrup. Then add the flour and sugar.
4. Toss the cocoa, melted butter, vanilla extract, baking powder, water and butter.
5. Mix the ingredients from low to high speed until mixture turns into a nice and smooth batter.
6. Stir the mixture and transfer it into the 2 greased tins equally.
7. Spread the mixture over the tin and bake in oven for 25 to 30 minutes.
8. When cake is cooked, transfer it to a wire rack and let it cool for about 10 minutes.
9. Then make the frosting by putting the melted chocolate in a large bowl. Add the sour cream and whisk together until smooth.
10. Take one cake and remove the lining paper. Transfer it to a cake plate. Put an amount of frosting on top of the cake and spread evenly.
11. Take the other half of the cake, remove its lining paper and let it sit on top of the frosted cake.
12. Add the remaining frosting and spread on top and the sides of the cake.
13. Use a palette knife to spread the cake and do it quickly as the frosting will easily settle.
14. Serve.
