What Wikipedia Has to Say...
After fermentation, the beans are dried, cleaned, and roasted, and the shell is removed to produce cacao nibs. The nibs are then ground to cocoa mass, pure chocolate in rough form. Because this cocoa mass usually is liquefied then molded with or without other ingredients, it is called chocolate liquor. The liquor also may be processed into two components: cocoa solids and cocoa butter. Unsweetened baking chocolate (bitter chocolate) contains primarily cocoa solids and cocoa butter in varying proportions. Much of the chocolate consumed today is in the form of sweet chocolate, combining cocoa so...

chocolate is one of the most tastiest foods i reakon and can put u in a good mood sometimes. as for health it is not good to overconsume too much because there is alot of saturated fat and sugar. people can say it is healthy because it has some benifits but compare it to fruit and veg and chocolate is put to shame in health benifits.
p.s chocolate is a nice food to relax and enjoy i include it in my diet and i am very fit and healthy but i would never consider it a healthy food.

I love warm dark chocolate the best. Flourless chocolate cake is really awesome. And having chocolate everyday is absolutely worth the fat, calories, and sugar! :)

I absolutely adore milk chocolate especially if it's fruit and nut or wholenut. I would happily live on chocolate if my waistline could handle it (which sadly is never going to happen)but even just a sniff is enough to cheer me up. I'm sure doctors would have a much easier life if they could prescribe chocolate instead of pills, it has a much quicker effect than any antidepressant and is probably a lot cheaper!

Chocolate is brilliant. Even if it was bad for me, I would eat it because it rocks. It may an aquired taste, but if the Aztecs could eat it without sweeting, so can I.

Can't live without it. One of the pleasures in life is eating, and I love eating chocolate. Also, when I'm feeling sick to my stomach, it has a soothing reaction.

I couldn't agree more. As I get older I am developing a taste for dark chocolate. Like a good coffee or a fine Cabernet, I think you can taste the difference in a good quality chocolate, which doesn't necessarily have to be expensive.

About Cocoa Beans
Cocoa bean (also cacao beanCacao as fruit of cacao tree], often simply cocoa and cacao) is the dried and fully fermented fatty seed of Theobroma cacao, from which cocoa solids and cocoa butter are extracted. They are the basis of chocolate, as well as many Mesoamerican foods such as mole sauce and tejate.
A cocoa pod (fruit) has a rough leathery rind about 3 cm thick (this varies with the origin and variety of pod). It is filled with sweet, mucilaginous pulp (called 'baba de cacao' in South America) enclosing 30 to 50 large seeds that are fairly soft and pale pink or lavender in color. Seeds usually are white, becoming violet or reddish brown during the drying process. The exception is rare varieties of white cacao, in which the seeds remain white. Historically, white cacao was cultivated by the Rama people of Nicaragua.
Yummm!
