Cookies Cookies And More Cookies Please!
Cookies are sprinkled throughout the house, a wonderful holiday treat that are set out on platters and fancy crystal trays for arriving company to munch on.
Children know that the most important function of cookies at Christmas though is as a night time snack for a very special visitor. Before bedtime they will set out a glass of milk and a plate of cookies to refresh Santa after his long ride through the sky.
Cookies are a tradition during the holiday season, they make the house smell like heaven, and little tummies gurgle in anticipation. Cookies sure are a little something wonderful!
(Christmas Day is December 25, 2009)

Soft Sugar Cookies
1 cup butter1 1/2 cup white sugar
3 eggs
1 teaspoon vanilla
2 3/4 cups flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1. Preheat oven to 375 degrees.
2. In a mixing bowl cream together butter and sugar. Beat in eggs and vanilla. Gradually add in baking soda, baking powder and flour.
3. Roll teaspoonfulls of dough into balls. Place on ungreased cookie sheet.
4. Bake for eight to ten minutes. Leave to cool a for a couple minutes on cookie tray before removing.

Hard Sugar Cookies
1 1/2 cups softened butter2 cups white sugar
4 eggs
1 teaspoon vanilla
5 cups flour
2 teaspoons baking powder
1 teaspoon salt
1. In a large mixing bowl cream together butter and sugar until smooth
2. Beat in eggs and vanilla. Then mix in the flour, baking and salt.
3. Cover bowl and chill dough for at least one hour.
4. Preheat oven to 375 degrees. Roll out dough on a floured surface to between one quarter and one half inch in thickness.
5. Use cookie cutter to cut into dough into cookie shapes. Place cookies one inch apart on greased cookie pans.
6. Bake six to eight minutes. Cool cookies before decorating with icing.
Soft Gingerbread Cookies
2 1/4 cups flour2 teaspoons ginger
1 teaspoon baking soda
3/4 teaspoon cinnamon
1/2 teaspoon ground cloves
1/4 teaspoon salt
3/4 cup nonhydrogenated margarine
1 cup white sugar
1 egg
1 tablespoon water
1/4 cup molasses
2 tablespoons white sugar
1. Preheat oven to 350 degrees.
2. In a large mixing bowl cream together the margarine and one cup sugar smooth. Beat in the egg, water and molasses. Gradually blend in the dry ingredients.
2. Shape teaspoonfulls of dough into balls and roll them in the remaining 2 tablespoons of sugar. Set the balls two inches apart on an ungreased cookie sheet. Flatten with a fork.
3. Bake for 8 to 10 minutes. Allow cookies to cool slightly on baking sheet before removing from pan.
Hard Gingerbread Cookies
6 cups flour1 tablespoon baking powder
1 tablespoon ground ginger
1 teaspoon nutmeg
1 teaspoon ground cloves
1 teaspoon cinnamon
1 cup softened shortening
1 cup molasses
1 cup packed brown sugar
1/2 cup water
1 egg
1 teaspoon vanilla extract
1. In a mixing bowl, stir together shortening, molasses, brown sugar, water, egg, and vanilla. Gradually stir in dry ingredients until mixture is smooth.
2. Divide dough into 3 parts. Wrap in plastic wrap and refrigerate for at least 3 hours.
3. Preheat oven to 350 degrees. On a lightly floured surface, roll out dough to approximately 1/4 inch thickness. Cut into shapes and lay these onto an ungreased cookie sheet.
4. Bake for 10 to 12 minutes. When cool frost with the your favorite icing.

I was frightened of gingerbread men as a child, the thought of a biscuit suddenly getting up and running away really freaked me. Now I can't get enough of ginger in any shape or form, I try to use it daily as a natural pain relief and because it tastes so good with anything.
