Mars Bar Slice
A square tray or dish that will go into the fridge.
3 Mars Bars
3 oz butter
3 cups of Rice Krispies
Chocolate to melt
Cut up the Mars Bars into small pieces and place them in a bowl with the butter. Melt them in the microwave. Careful not to "cook" the Mars Bars, it should just start to melt with the butter.
Pour in the Rice Krispies and stir.
Put the mixture into the tray and flatten it down with the back of a spoon so the mixture covers the tray evenly. Place it into the fridge for an hour or so until it sets.
Cut the slice into bite sizes pieces.
For chocolate lovers melt some chocolate and pout it evenly over the slice before you cut it and place it back into the fridge for the chocolate to set. Enjoy!
Christmas food- chocolate balls
250g plain sweet biscuits
1 cup coconut
1 can sweetened condensed milk
3 tablespoon of cocoa
Crush the biscuits. You can do this by putting them into a plastic freezer bag and rolling your rolling pin over the top. Or putting them into a blender.
place crushed biscuits into a bowl, add coconut, condensed milk and cocoa.
Mix well with a wooden spoon.
Take a tablespoon full of mixture and shape into a ball. Roll in the coconut. Pop them into the fridge to set.
You can add a drop of white melted chocolate o the top and add a decoration of a small piece of cherry and green mint leaf to look like holly on top of the chocolate ball. Now you have little mini puddings.
Christmas Cake
My Grandma's famous fruit cake recipe
My Mother made this recipe every Christmas I remember as a young child her preparing everything before Christmas. When I was older I would help her. In my early 20's I did a cake decorating course and decorated Mom's Christmas Cake for her each year.
My dear Mom died of Alzheimer's in July2008.
Her Christmas cake would be a favorite of all the family and everyone made sure they had an extra piece to take home with them at the end of Christmas day. So I hope you enjoy this traditional Christmas cake recipe.
3/4lb butter
1 1/2 cups of sugar
4 eggs beaten
2lb mixed fruit
1lb plain flour
1/2 packet mixed spice
1 tablespoon of treacle
1/2 cup warm milk
1 teaspoon bicarb soda
1 tablespoon of Brandy (If you don't like Brandy just leave it out, if you do add more!)
Melt the butter in a large bowl then add sugar and stir.
Add egg mixture and beat well.
Add the rest of the ingredients.
Add the plain flour last.
Mix well.
Use butter to grease a large round cake tin around the sides and base.
Line the cake tin with brown paper around the sides and the base. Use the butter to grease to paper too. Cut a circle of brown paper to fit over the top of the cake so the top doesn't burn while cooking.
Bake for 3 hours in a very slow oven.
