    Nice recipe and my 29 years as a baker tells me it should make a very good ciabatta. Sponge and dough method always makes a better tasting bread.

    YUM, YUM, YUM!!! This is the easiest and tastiest recipe ever! Thanks so much, I have made this bread about 6 times now and it works every time. I only put less than a tsp of salt as it's a bit too salty with 1 and half tsp. It's really important to let it rise properly each time in order to get a nice light bread also to get a decent size.

    Nice recipe ThomasC. Once you get the hang of handling the sticky dough making good ciabatta is actually fairly easy. Throwing lots of flour around helps, although my wife doesn't seem to like the idea. ;)

    I've never tried Ciabatta bread. I make our own bread using a breadmaker just to mix it to the dough stage then take it out and put it in a pan to raise again, then into the oven. I am wondering if this would work with Ciabatta bread? 5 stars, favored, fan and lensrolled.

    I too am familiar with Mr. Reinhart's work. We used his book as one of the texts for a class I took. My instructor said that each class seemed to have one person who excelled at Ciabatta. I was dubbed 'Ciabatta King' in my class. He always reached for my loaves first.
