So, What is a Water Oven, Anyway?
A water oven is an appliance that cooks food in vacuum sealed bags in their own juices. Meat or vegetables you want to cook are placed in a bag, seasonings (if desired) are added, then the bag is sealed and placed in the water oven. The oven is filled with water and cooks the food inside the bag. The temperature is precisely controlled, so that there is no possibility of burned food. According to all reports, meats cooked in a water oven is tender and delicious. However, since there is no roasting or searing, meat tends to come out of the oven a bit pale, which some people complain about. Because the food is sealed inside the vacuum bag, there is no loss of flavor or nutrients.
The water oven is about the size of a bread machine, and since there is no food touching the inside of the oven during cooking, cleanup is a breeze. Just wait till the water cools, then pour it out and wipe the oven dry. The main downside to the water oven is that you have to have a vacuum sealing machine, such as the FoodSaver, too, for it to work. The cost of the vacuum bags might increase the cost of the meal slightly, but it can be offset by using lower priced cuts of meat. Even meats that generally are tough are tender when cooked in the water oven.
