Coconut Cream Cake: Think Delightful, Decadent, Delicious
Need a cake for a party or a special occasion? How about for Easter or for a birthday? This coconut cream cake is the perfect choice. It's sweet, very rich and flavorful, pretty, and even a little bit decadent!
You might think a dessert with all those qualities would be a challenge to bake, but this recipe is very easy, I promise. It's one of our favorite indulgences and, trust me, I don't "do" difficult.

Coconut Cream Cake recipe

COCONUT CREAM CAKE
Ingredients:
1 box of white cake mix
1 can Eagle Brand Milk
1 can cream of coconut
1 bag of coconut flakes
1 container of Cool Whip
Method:
Bake cake according to package directions, adding half of the bag of the coconut flakes to the cake mixture. (I use a 9x13 or 8x13 cake pan.)
As soon as cake comes out of the oven, spray a wooden spoon handle with a cooking spray. Poke holes in cake about a half inch apart. Mix the cream of coconut and the Eagle Brand Milk together and pour evenly over the top of the cake. Cool cake completely.
In the same bowl, mix the entire container of Cool Whip with the remaining bag of coconut flakes. Top cake with Cool Whip mixture and spread evenly. Refrigerate immediately. Cake tastes best after chilling several hours or overnight.
VARIATION: For a Pina Colada Cake variation, after pouring on the cream of coconut mixture, top the cake with a can of crushed pineapple (drained), then chill and proceed as directed. (Thanks to soliel for making this suggestion on my blog!)

According to the Coconut Research Center:
