Dreamy Creamy Coconut Cupcakes

Coconut is one of those take or leave things; you either like it or don't-there's no middle of the road. Personally, I like coconut any way I can get it! My preferred way is in baked goods: cake, cupcakes, pudding, pie, or bread.

My coconut cupcakes are soft and moist. This is because I use coconut cream (or cream of coconut) instead of coconut milk. Coconut cream, as you can imagine, is richer and denser then coconut milk. It comes from a first pressing, while coconut milk comes from a second pressing. Coconut cream is also more difficult to find then coconut milk. Because of this I've included recipes to make your own coconut cream (or milk). This takes a little bit of time, but is well worth the effort.

Coconut Cupcakes with Cream Cheese Frosting

Coconut Cupcakes
2 1/4 cup all purpose flour
1 teaspoon sea salt
1 teaspoon baking powder
1 cup coconut cream
1 teaspoon vanilla extract
1/4 teaspoon coconut extract
3/4 cup unsalted butter, softened
1 1/4 cup granulated sugar
3 large eggs, room temperature
1/2 cup shredded coconut

1. Preheat oven to 350 degrees. Grease or line cupcake pans with wrappers.

2. Combine flour, sea salt, baking powder; set aside. In a measuring cup combine coconut cream and extracts; set aside.

3. In the bowl of a stand mixer beat butter and sugar until light and fluffy. Add eggs one at a time, mixing well.

4. Add dry ingredients, alternating with coconut cream mixture. Mix just until blended; do not overbeat. Fold in coconut.

5. Fill each cup 2/3 full and bake 18-22 minutes or until cake tester comes out clean. Cool completely and frost. Makes 20 cupcakes.

Cream Cheese Frosting
1/2 cup unsalted butter, softened
8 ounces cream cheese, softened
1/2 to 1 cup powdered sugar
1 teaspoon vanilla extract or 1/4 teaspoon coconut extract
1/4 cup shredded coconut

Put butter and cream cheese in a large bowl and beat with an electric mixer until creamy. At low speed add powdered sugar until desired consistency is reached. Add vanilla or coconut extract. Fold in coconut.

Make Your Own Coconut Cream

1. Combine 1 part boiling water* or scaled milk or cream to 4 parts shredded fresh coconut. Let steep for 1 hour.
2. Line a sieve with cheese cloth and place over large bowl. Squeeze handfuls of coconut over sieve. Discard shredded coconut when complete.

To make coconut milk use equal parts of boiling water* and shredded fresh coconut.

*you can use coconut juice as part of the water.

Yes, I know-expensive! But if you do a lot of baking a good stand mixer will pay for itself. It is especially useful during the holidays when big batches are called for. I've had a KitchenAid for years and would recommend it to anyone. It's sturdy and comes with a bread hook.

    Wow! Your recipe for coconut cream cupcakes looks amazing. I like how you use cream cheese frosting too, for double goodness. I am looking for something to bake my Mom for Mother's Day, these might just do the trick!
