The next 3 months are a hodgepodge of kids sleeping in and then gluing themselves to the TV/computer/i-whatever, before you drive them to soccer camp, running camp, arts and crafts camp or where ever the mom taxi route goes.

What I need is a vacation from their vacation. Somewhere tropical... somewhere where limes and coconuts play heavily into the menu. Until I can get there... I'll be munching on these Coconut Lime Muffins...
Sweet and moist from the coconut, with a tartness that can only come from limes.
And they are delicious, whenever and wherever breakfast happens.

Coconut Lime Muffins
Sweet Tart Delicious Muffins

- Serves: 12 muffins
This isn't a traditional muffin... I know... but it looks like one and eats like one... so for arguments sake, it is one.
There are a few extra steps, but I promise it will be worth it.
Cream of Coconut is found in the Adult Beverages section in our grocery store (generally, you use it to make Pina Colodas). It's non-alcoholic, and thick as heck. If you can't find it... use heavy cream and a teaspoon of coconut extract.
You can double this recipe.
Don't be intimidated by the list of ingredients.... Lime peel and lime juice are listed a few times... you can prep it all at once.
Read the whole recipe before starting... OK?
Ingredients
- MUFFIN
- 1 1/2 cups Unbleached Flour
- 1 1/4 tsp. Baking Powder
- 1/2 cup Butter
- 3/4 cup Granulated Sugar
- 2 Eggs
- 1/2 cup Cream of Coconut
- 1/4 cup milk
- 2 tsp. Grated Lime Peel
- 1/4 cup Lime Juice
- 1/2 cup Coconut
- SOAKING LIQUID
- 1/3 cup Lime Juice
- 2 tsp. granulated Sugar
- GLAZE
- 1 cup Powdered Sugar
- 1/2 tsp. grated Lime Peel
- 4 to 5 tsp. Lime Juice
- TOPPING
- 2-3 TBL Toasted Flaked Coconut
Instructions
Preheat Oven to 350 degrees F.
Line a muffin pan with paper liners... give them a spritz of non-stick spray for insurance.
Combine flour and baking powder in a small bowl... set aside
Combine Cream of Coconut and milk in a small bowl... set aside
Cream Butter and Sugar in a mixing bowl.... let it spin a couple of minutes to get nice and fluffy.
Add Eggs... one at a time.... mix... then scrape down bowl.
Add Lime Peel and Lime Juice... mix... then scrape down sides of the bowl.
Now add the flour mixture and coconut mixture... alternate so that you start and end with flour.
Beat until all combined... stir in coconut.
Now fill in the muffin pan. I find that an ice cream scoop works GREAT for this. I know, I know... I used to scoff too... try it once, you'll never use a spoon again.
Bake 20 to 25 minutes... until a toothpick stuck in the center comes out clean.
Now... while that is happening, you have a few other tasks-
Toast the Coconut- I put a few tablespoons of flaked coconut into an oven safe pan, and set in oven with the cupcakes... should only take 5 to 10 minutes to toast the coconut, so keep an eye on it! When it's nice and brown... take it out of the oven and cool on a plate. Set aside
Make the Soaking Liquid- In a small bowl, combine the 1/3 cup lime juice and 2 tsp. sugar... stir until dissolved. Set aside.
Ok.. by now the muffins are done and out of the oven... Poke a few holes into the top of the hot muffins with a fork (you are not digging holes, just making little holes, so don't go too crazy.) Carefully spoon a teaspoon of Soaking Liquid on each muffin.
Let the muffins cool.....
Make the Glaze-
Combine Powdered Sugar, lime peel and lime juice in a bowl and stir until it looks like thick glue.with green flecks in it.
When muffins are cool, spoon a tablespoon of glaze (or more, or less) on each muffin. Sprinkle with the toasted coconut.
