This is one of those things that sounds too good to be true: loads of vitamins, minerals, amino acids, all wrapped up with a LOW glycemic index. Where Does Coconut Sugar Come From?

The process of making Coconut Palm Sugar involves two steps: harvesting the sap or "toddy" from the coconut blossoms, also known as "tapping" the tree. The second step is slowly heating the freshly collected sap to evaporate the moisture and reduce it to crystallized form.
Tapping the tree involves making a cut on the coconut.spadix, and it is actually possible to have two products from a single blossom, sugar and nuts! Welcome news to farmers as it does not affect coconut production.
Coconut sugar is a standard sweetener in Asian countries, where it has been used for centuries.
The Glycemic Index of coconut sugar is 35 and it's classified as a low glycemic index food.

- I've just started experimenting with agave, for the lower glycemic index, so I will have to try some of this coconut sugar. Interesting how they can tap the tree AND still get the nuts. What a great resource!

- A very helpful lens - I did not know about coconut sugar before but will definitely look for it. I hate artificial sweeteners and chemicals in general so coconut sugar will be a welcome addition to my pantry. thank you.

- I never heard of this before. It's fantastic that the farmers can still get the sugar and grow the nuts, too. I'm going to give it a try. I loved the peanut butter cookie recipe video. How easy is that?! LOVE!
