Pumpkin Bread Made in a Coffee Can?
My Mother started making these unique "loaves' years ago and gave them away to everyone all during the Holidays. I don't know where she found the recipe but our whole family uses it now and we kept the tradition of giving it away to all our friends from right after Halloween all the way through Christmas.
Enjoy this wonderful Pumpkin Bread made from your leftover Halloween pumpkin and all the coffee cans in your cabinet you didn't throw away. How cool is that?
Don't worry, if you don't have natural pumpkins, you can used canned pumpkin, and if you don't have coffee cans you can use baking pans. See cooks notes below.

Ingredients
2 cups of cooked prepared pumpkin
or 1 large can pumpkin, drained
3 cups Sugar
1 cup canola or rapeseed
or extra light virgin olive oil
3 eggs
3 cups flour
1 cup raisins
1 cup chopped nuts (optional)
1 tsp each of
cloves
allspice
salt
baking powder
baking soda
2 tsp cinnamon
Directions
For Your Coffee Can Pumpkin Bread
If you are using leftover or fresh pumpkins, prepare them first.Preheat oven to 350 degrees F.
Grease and flour three (13 oz.) coffee cans (or two standard bread pans).
In a large bowl, mix suger and oil and add eggs one at a time. Set this mixture aside.
Sift flour and all spices together.
Add flour mixture and pumpkin alternately to the sugar/oil mixture. Mix just enough to moisten all the dry ingredients; It's better if you don't overbeat. Lastly, add raisins and nuts. (I think it tastes better without nuts and many people are allergic to nuts, so I leave them out.)
Pour mixture into the 3 coffee cans or the 2 loaf pans. Stir a bit when mixture is in the cans to avoid air bubbles.
Cover loosely with foil.
Bake at 350 degrees for 70-80 minutes.
Cool for 10 minutes before loosening from cans or pans.
Serve with Coffee and/or Ice Cream or whipped cream.
Makes about 24 slices.

- I think I'm going to have to buy another sugar pie pumpkin and mix up a batch of this bread. I bet it would work just as well with butternut squash, don't you think? That's what they they use in canned pumpkin, anyway. Might have to try this tonight, since I have one on hand.

- I love pumpkin bread. This recipe sounds delicious - I need to bake some pumpkin bread one day soon. I have, tucked into storage somewhere, a cool baking pan that is a coffee can like mold for 5 or 6 loaves. I've never used it, and I think it's commercial grade. One of my cousins picked it up for me at a thrift shop along with some other cool kitchen gadgets. Reading this pumpkin bread recipe and seeing the coffee can shape made me wonder where that pan is, I am sure I still have it, I just don't know which storage unit it's hiding in. Wonderfully done, this lens. I can almost smell the pumpkin bread baking.
