Ingredients You Will Need For This Creamy Colcannon Recipe

This recipe for creamy colcannon should make enough for four servings

four leaf clover

800g peeled potatoes cut into chunks (King Edward's or Maris Piper)

250g shredded green cabbage

four leaf clover

10-12 spring onions (scallions)

100ml single cream

four leaf clover

50g butter

four leaf clover

Sprinkle of ground nutmeg

Salt to taste

How To Make The Creamy Colcannon

Just follow the instructions to make the perfect creamy colcannon

Place the potatoes in a large saucepan, salt to taste & cover in boiling water. Cover and bring to the boil. Cook until tender which should be in 20 -25 minutes.

Meanwhile melt about 1/3 of the butter in a frying pan and gently sauté the cabbage and spring onions for 3 - 4 minutes

Drain the potatoes into a colander and leave for 3 minutes for any excess moisture to evaporate. Return the potatoes to the saucepan.

Add the cream, butter, and nutmeg to the potatoes and whisk or mash. Gently stir in the vegetables, check seasoning and serve.

It's quick and produces a smooth creamy mash, however some say whisking has a detrimental effect on the texture. If you choose not to whisk, either mash by hand or better still use a potato ricer - time consuming but worth it.
