Company's Coming Canada's Most Popular Cookbooks

Company's Coming and Jean Pare have written a cookbook for almost every cook from the very youngest to the very experienced. This fantastic series of cook books is extremely popular and most books are still available. A few are out-of-print or hard-to-find.

Company's Coming cookbooks are sought after by those trying to complete a collection and by those who simply know that the Pies one is wonderful, that the Breads one is superb and that the Desserts one is packed with yummy recipes. Of course they have done healthy cooking cookbooks too with topics like low-fat, low-carb and diabetic cooking included.

Jean Pare's Appetite For Life 

Company's Coming ~~ Family, friends and home cooking a recipe for a good life.

Born and raised in Irma, Alberta (Canada), Jean Pare always loved being in the kitchen. At 18 she married her first husband who did well and life, for a while, was good. However, life with her troubled husband fell apart when he walked out. Pare and her children actually lived in a tent when her husband gambled away their finances.

She sold a rental property and obtained a bank loan to open a small diner. That wasn't a huge success unless you count the fact that she met her second husband, Larry Pare there. Then she opened a catering business in an effort to pay off some of the debts from her first marriage.

Through this catering business, she received numerous requests for her recipes and in the fall of 1980, working with her son, she created Company's Coming Publishing Limited. Her first cookbook - 150 Delicious Squares - was released on April 14, 1981 in Edmonton, Alberta. It marked the beginning of a hugely popular cookbook series that has seen more than 75 cookbooks created and more than 26 million sold. The Company's Coming brand does $18 million dollars of retail sales per year.

Today, at 74, she works with and creates recipes with the staff of the 'Recipe Factory.' She holds to her Golden Rule of Cooking: "Never share a recipe you wouldn't use yourself."

This is the very first book that Jean Pare struggled to write and that launched a hugely successful enterprise. Jean Pare's Brownie Recipe

A favourite of Mrs. Pare's mother, it is also one of hers. Originally, the recipe was made with melted chocolate but that has been changed to cocoa, which is the author's preference. This square is one that Mrs. Pare used as a standard gift during many of her media appearances -- she said it travels well and chocolate is well received.

Try this recipe and maybe you'll decide you want this, her very first cookbook! (By the way, this recipe came from the back of her biography, An Appetite for Life, and I do not actually know if this recipe appears within 150 Delicious Squres but I'm betting that it is a good indication of the quality of the squares found within this cookbook!)

1/2 c butter
1/4 c cocoa, sifted if lumpy
2 eggs
1 cup granulated sugar
3/4 c flour
1/2 c chopped walnuts
1/8 tsp salt

Icing:

1 1/3 c icing sugar
1/3 c cocoa, sifted if lumpy
3 tbsp butter or hard margarine, softened
1 1/2 tbps prepared strong coffee or water

Heat butter and cocoa in small saucepan, stirring occasionally, until butter is melted. Remove from heat.

Beat eggs in medium bowl until frothy. Add next 4 ingredients. Don't stir yet. Pour cocoa mixture over top. Stir well. Spread in greased 8 x 8 pan. Bake in 350 oven for 25 to 30 mintues until edges start to pull away from sides of pan and wooden pick inserted in centre comes out moist but not wet with batter.

Icing. Beat all 4 ingredients i medium bowl until smooth and light, adding more coffee or icing sugar if needed until spreading consistency. Spread on warm brownies. Let stand until icing is set before cutting. Cuts into 25 squares.

A more recent series created by Jean Pare, is the Greatest Hits Series. It includes six titles: Mexican; Italian; Soups and Salads; Biscuits, Muffins and Loaves; Sandwiches and Wraps; and Dips, Spreads & Dressings. A wonderful group of cookbooks that includes recipes taken from the earlier Company's Coming cookbooks and organized under a single topic.

Two of these titles, The Mexican and The Italian, were issued as giftsets. I have a limited supply of the Italian one which arrives with an attractive artichoke serving dish.

These books are no longer in print and often out of stock so you may have to work harder to find them!

Thai Coconut Chicken Recipe from Low-Fat Express (2008) 

This cookbook contains over 140 healthy, tasty recipes that can be made in 30 minutes or less. Try this one today!

1-1/4 cups (300 mL) prepared chicken broth
3 tablespoons (45 mL) lime juice
2 tablespoons (30 mL) soy sauce
1 tablespoon (15 mL) finely grated gingerroot
1 tablespoon (15 mL) grated lime zest
2 garlic cloves, minced
1/4 teaspoon (1 mL) pepper
4 boneless, skinless chicken breast halves (about 4 to 6 oz/113 to 170 g each)
1/4 cup (60 mL) packed brown sugar
2 tablespoons (30 mL) reduced-fat peanut butter
1 tablespoon (15 mL) sweet chili sauce
1/2 cup (125 mL) light coconut milk
2 teaspoons (10 mL) cornstarch

Combine broth, lime juice, soy sauce, gingerroot, lime zest, garlic and pepper in a medium frying pan. Bring to a boil. Reduce heat to medium. Add chicken. Cook, covered, about 12 to 15 minutes, turning halfway through cooking, until chicken is no longer pink inside. Transfer chicken to a plate. Cover to keep warm.

Whisk brown sugar, peanut butter and chili sauce into broth mixture until smooth. Bring to a boil. Stir coconut milk into cornstarch in a small cup. Slowly add to broth mixture, stirring constantly with whisk, until boiling and slightly thickened. Serve with chicken.

Makes 4 servings. Per Serving:

304 Calories, 7.6 g Fat (2.7 g Saturated Fat), 22 g Carbohydrate, 35 g Protein, 1 g Fibre

Caribbean Muffins


Tropical flavours come together to delight your senses-coconut, mango and lime, with crunchy brazil nuts. Make these when you want to really impress!

All-purpose flour 1 cup (250 mL)
Whole wheat flour 1/2 cup (125 mL)
Natural oat bran 1/2 cup (125 mL)
Chopped brazil nuts (or almonds), 1/4 cup (60 mL)
toasted
Baking powder 2 tsp. (10 mL)
Baking soda 1/2 tsp. (2 mL)
Salt 1/4 tsp. (1 mL)

Packages of key lime dessert tofu 2 (5.35 oz., 150 g, each)
Granulated sugar 1/2 cup (125 mL)
Large egg 1
Chopped fresh (or frozen) mango 1 cup (250 mL)
Mashed overripe banana 1/2 cup (125 mL)(about 1 medium)
Dark (navy) rum 2 tsp. OR 1/8 tsp. (.5 ml) rum extract plus 2 tsp. (30 mL) water
Lime juice 2 tsp. (10 mL)
Grated lime zest 1 tsp. (5 mL)
Coconut extract 1/2 tsp. (2 mL)

Finely chopped brazil nuts (or almonds), 2 tbsp. 30 mL
toasted

GLAZE
Brown sugar, packed 1/4 cup 60 mL
Butter (or hard margarine) 1 tbsp. 15 mL
Lime juice 2 tsp. 10 mL
Dark (navy) rum (or 1/8 tsp., 2 tsp. 10 mL
0.5 mL, rum extract plus 2 tsp.,
10 mL, water)

Measure first 7 ingredients into large bowl. Stir. Make a well in centre.

Beat tofu, granulated sugar and egg in medium bowl until smooth. Add next 6 ingredients. Stir. Add to well. Stir until just moistened. Fill 12 greased muffin cups 3/4 full.

Sprinkle with second amount of brazil nuts. Bake in 375°F (190°C) oven for about 25 minutes until wooden pick inserted in centre of muffin comes out clean.

Glaze: Combine all 4 ingredients in small saucepan. Bring to a boil on medium. Heat and stir for about 1 minute until slightly thickened. Spoon over hot muffins. Let stand in pan for 5 minutes before removing to wire rack to cool. Makes 12 muffins.

222 Calories; 6.2 g Total Fat (1.9 g Mono, 2.1 g Poly, 1.8 g Sat); 21 mg Cholesterol; 37 g Carbohydrate; 2 g Fibre; 6 g Protein; 189 mg Sodium

I think one reason why her cookbooks are so popular is they are quite economical, she uses ingredients most people have in their homes already and most are fast and easy to make. I love her casserole cookbook. Great lens too!

The spiral-bound ones don't take up alot of room in the suitcase. Lenrolling to my Who is Jean Pare? lens. Cheers:)

I had not been familiar with Jean Pare's cookbooks before reading your lens. For the most part, because all of our friends are into lots of socializing and tailgating, etc., we sure could use low-carb, low-calorie recipes. It's a challenge when a particular friend comes to our house -- I have to prepare 2 separate chili recipes, and then leave pork and bacon products out of other recipes and certain spices.
