Chef Feegle's Cookie Bar Delight's
I have to warn you, they may not look like Christmas but the flavors just pop in your mouth, saying oh, this is without a doubt a Christmas Cookie!! I wish you were here to help me test things out, yum!
As with all of my recipes, I do not add salt and I use no-sodium baking powder and baking soda and no salt butter. I use as many organic ingredients as I have on hand that I purchased on sale. So adjust the recipe to use what is in your pantry, because I know your's will be just as good!!

Mixing Bowls
The Cookie

- Serves: Depends how you cut them-Approx 30 or more
- Prep Time: 1 Hour
- Total Time: 1 Hour 25 Minutes
Ingredients
- 1 cup All purpose Flour
- 1 cup Pastry Flour
- 3 teaspoons No-Sodium Baking Powder
- 1 Stick Melted No-Salt Butter
- 1 cup Organic Sugar
- 2 teaspoons Almond Extract
- 2 Egg Whites
Instructions
Mix ingredients together well. The dough will look crumbly but pick some up and see if you can make a ball and it sticks together. If it does you know you have the correct texture.
Place dough between two sheets of wax paper or parchment paper and roll flat and place on a non-stick cookie sheet. Set aside to make your topping.

Flatten about 1/4 inch thick or so

- Serves: Enough for one batch
Ingredients
- 1 6oz. package of Cherry Cranisins
- 2 Oranges-juice and zest
- 1 cup chopped walnuts
- 1 cup Mini Semi-sweet Mini Chocolate Chips
- 1/2 cup Organic Coconut
Instructions
Mix everything together real good. I began by chopping my ranisins with the juice and zest of the oranges. Than I chopped the walnuts. You really need to taste this combination, it is so good!
Spread this mixture over the top of the flattened cookie and gently press it into the dough to make sure it holds. You will bake for 15-25 minutes on 350 degrees. Watch the middle that is the part that takes the longest to cook.

Cut while still hot because they are soft
Did you know that nuts such as walnuts, pecans, almonds, and so on stay fresher longer if stored in the freezer?
Non-Stick Cookie Sheets

Drizzle the top with 1/2 cup of melted Dark Chocolate
Since you are using the juice and zest from both Oranges-you can boil what is left of the orange and add some cinnamon for a nice scent in your kitchen.

- Delicious they look so nice, I have a sweet tooth so these cookie bars are right up my ally. I would have to make 2 batches though as I have to agree with Sandy I'm not a fan of coconut but Marta is. Just an excuse to eat them all on my own really. Amazing looking cookie bars, blessed and lensrolled to my flapjack lens.
