Making Lovely Cookies Using Molds, Stamps and Presses

Around the world cookies are made using wood, clay, metal (and now even silicon) cookie molds and stamps. Mouthwatering butter cookies are made pretty by squeezing them through a cookie press. If you don't want to make cookies, the molds can be used to form paper pulp for crafts. And if you don't want to make anything at all, the molds are highly collectible and can be displayed in groupings on the wall.

I thought it would be interesting to gather all the different styles of cookie molds and presses into one place, so I made this lens. Like my Gingerbread and Sugar Cookies lenses, this one has opened the door to a worldwide cookie mold phenomenon I didn't know existed. If you really want to learn about something, make a lens!

Sandbakelser, or Swedish Cookie Shells 

Buttery melt-in-your mouth cookies...

My mom made these when I was a kid but not very often because they are time consuming. Baked in tiny tartlet pans such as those below, they look like shells when turned out of the pans. The recipe below suggests fillings for them but they're great plain.



Sandbakelser Recipe

Traditional Swedish cookie tarts filled with preserves
Makes about 60

1 cup butter or margarine
1 cup sugar
1 egg
1 teaspoon almond extract
3 cups sifted enriched flour
Filling such as whipped cream, jam, or preserves

Thoroughly cream butter and sugar; add egg and beat well. Add almond extract. Stir in flour. Pinch off a small ball of dough and place in center of small tartlet mold (available here); with thumb, press dough evenly and as thinly as possible over bottom and sides. Place molds on cookie sheet. Bake at 350 F about 12 minutes or till lightly browned. Cool. To remove: Invert molds and tap lightly. (clean molds with dry cloth only). Before serving, fill tarts with whipped cream, jam, or preserves, as desired.

CINNAMON BUDDHA COOKIES

adapted from Dorie Greenspan's book "Baking: From My Home to Yours" (Sweet Tart Dough recipe)

Ingredients

* 1 1/2 cups all-purpose flour
* 1/2 cup confectioners' sugar
* 1 stick plus 1 tbsp (9 tbsp) unsalted butter, chilled and cubed
* 1 large egg yolk
* 2 tsp ground cinnamon

Lemon Cheese Spritz Cookie Recipe

[Tips for making spritz cookies.]

1) Don't grease cookie sheets.
2) Add flour gradually.
3) Check for dough consistency before adding all of the flour.
4) If dough is too dry, add 1 egg yolk.
5) If dough is too soft, chill 30 to 60 min.

Yield: approximately 5 dozen

1 C. softened sweet butter
3 oz. softened cream cheese
1 C. sugar
1 egg
1 tea. grated lemon peel
1 Tbsp. fresh lemon juice
2 1/2 C. flour
1 tea. baking powder


Preheat oven to 375 degrees F.

Cream butter, cream cheese and sugar until light and fluffy. To the creamed mixture add egg, lemon peel, lemon juice, flour and baking powder, beating until creamy smooth.

Fill press with dough and form desired shapes onto ungreased cookie sheet. Bake approximately 10 to 12 min. or until lightly browned on edges.

French Madeleines

Delicate and buttery, french madeleines are somewhere between cake and cookie. A recipe only makes one tray at a time (see mold below) and they are best eaten the same day as baked. One of my English Lit professors made them once a year for his literary students as an extra special treat. I think of madeleines as being rare and rich.

I found the recipe below at The Worldwide Gourmet. It doesn't say to butter the molds but you should, and a moderate oven is 350 degrees F.


Ingredients

120 g (4 oz.) powdered sugar
120 g (4 oz.) flour
120 g (4 oz.) butter
4 eggs
1 tsp. baking powder
A few drops of vanilla or a pinch of powdered vanilla
Grated zest of an orange or lemon

Brown Bag Cookie Molds and Orange Spice Cookie Recipe

Orange Spice Cookies

1/2 cup butter - softened
1/2 cup light brown sugar - packed
1 egg (medium or large)
1 Tablespoon grated orange rind
1 tsp. grated lemon rind
1 Tablespoon orange liquor
1/2 tsp. cinnamon
1/4 tsp. ground cloves
1/8 tsp. allspice
1/4 tsp. salt
2 cups flour - scoop measured (use your measuring cup to scoop flour from the bag, then level)

Thoroughly cream the softened butter and sugar together by hand or with a mixer. Beat in the egg (if using a mixer, use the slowest speed), the grated orange and lemon rinds, and the orange liquor. In a separate bowl, mix all the dry ingredients, then stir them into the butter mixture. Knead for a minute. Chill the dough for 30 minutes and mold cookies as directed.

Bake at 350 F in the top third of your oven for 10-12 minutes, or until the edges are nicely browned.

Springerle Cookie Molds and Recipe

Springerle were made infrequently by my mom's family, mainly to honor our German ancestors and because they're so pretty. I remember not liking them much as a kid because they seemed bitter with the anise flavor and they were very hard. The anise and setting them out to dry overnight before baking is what makes Springerle unique. The recipe below looks a lot friendlier than the one in my family recipe box.


Ingredients

4 Egg -- medium
1 lb Powdered sugar
1 tb Lemon peel -- grated
4 1/2 c Cake flour -- sifted
1 t Baking powder
1/4 ts Anise extract

Instructions

Beat eggs until light. Stir in sugar and beat well. Add extract, rind and flour sifted with baking powder. Mix will. Chill 1 hour. Roll out ONE HALF INCH thick on floured board. Roll springerle pin over dough, or press mold into top, flouring pin or mold each time. Pam also helps. Expose to air overnight. Cut cookies apart and arrange on baking sheet. Bake at 350 for about 30 minutes. Do not overbrown. Not everyone likes the licorice flavor of anise, so orange, lemon, or vanilla may be substituted if desired. Store cookies in covered container with apple slices for 10 days before serving.

I came across this website during my searches for recipes to go with the cookie molds. It's a beautiful site with springerle presses, cookie stamps, cookie molds, spekulatius molds & speculaas boards, even butter molds, all hand carved. I think these would be great for collectors.
