A Brief Cookie History
The cookie got its start as a grain-water-paste concoction baked on stones by prehistoric farmers. When twice cooked and dried these cookies would have a long shelf life which was well suited for travelers. Later on, Alexander the Great re-introduced sugar to Persia and in the 7th century, Persian bakers put sugar to good use and added it, fruits, eggs and other ingredients to their pastries. When the Moors invaded Spain they brought these recipes with them. This knowledge then spread throughout Europe and then to the new world. The modern day name cookie came from the Dutch word 'koeptje' which means small cakes. These koeptjes were used to test the heat of the ovens for baking and as a by product koeptjes became cookies. Ancient people would be amazed at the modern day cookie and the variety of flavors. This Lens salutes those early bakers by offering a wide selection of gourmet cookies, cakes, brownies and more.
