Hillary Clinton's Chocolate Chip Cookies

1 1/2 cup unsifted all-purpose flour
1 teaspoon salt
1 teaspoon baking soda
1 cup solid vegetable shortening
1 cup firmly packed light brown sugar

1/2 cup granulated sugar
1 teaspoon vanilla
2 eggs
2 cups old-fashioned rolled oats
1 (12-ounce) package semi-sweet chocolate chips

Preheat oven to 350 degrees. Grease baking sheets. Combine flour, salt and baking soda. Beat together shortening, sugars and vanilla in a large bowl until creamy. Add eggs, beating until light and fluffy. Gradually beat in flour mixture and rolled oats. Stir in chocolate chips. Drop batter by well-rounded tea spoonsful on to greased baking sheets. Bake 8 to 10 minuter or until golden. Cool cookies on sheets on wire rack for 2 minutes. Remove cookies to wire rack to cool completely.

Alfalfa Bill Power Cookies


2 cups brown sugar 2 tsps.baking soda
1cup granulated sugar 3 cups uncooked oats
3/4 cup margarine (softened) 2 cups coconut
1 cup veg. shortening or 1 cup chocolate chips
1/3 cup olive oil 1 cup chopped nuts
4 eggs or 1 cup egg whites 2 cups raisins
2 tsps. vanilla
3 3/4 cups all-purpose flour
2 tsps. salt

Preheat oven to 350 degrees
Cream together brown sugar, granulated sugar, butter and shortening. Beat
in eggs and vanilla. Combine flour, salt and oatmeal; knead into mixture.
Add coconut, raisins, choc. chips and nuts. Drop by heaping teaspoon,
two inches apart on greased cookie sheet. Bake about 13 min. or until
cookies are golden brown. (careful not to overcook)
Let cookies cool on a baking sheet about 1 min. before removing.

Store in airtight container.
Makes 7 dozen irresistible cookies.
May be shaped into rolls of dough, wrap and freeze, then slice into 1/4 in.
slices and bake as instructed above.
