This book is absolutely perfect for anyone who finds themselves cooking for one or two people. Not only are the recipes absolutely wonderful, the recipes for using left-overs are also great. Jones shows you how to shop, stock your pantry and freezer, and make wonderful meals for yourself that don't take forever yet taste like they did. I have over 50 cookbooks, and this is the one I find myself turning to again and again for my daily meals. This is real food - no processed shortcuts, no sacrifices. If you like to cook but think its too much trouble for just one person, get this book and you will have fun in the kitchen again.

The book is about cooking for oneself many nights of the week for possibly an extended period of time. This is a reality that anyone could find themselves in at one time or another. The essence of this book is how does one pare down and prepare interesting "Old Fashioned" dishes that one has made for most of one's life without wasting an abundance of food or caving into the frozen food section of the local supermarket. To that end I think it succeeds admirably. it's written with style, wit and panache by a lady who has edited some of the most skilled and well known food writers of the last 50 years. The menu items are just about perfect for my taste and decidedly not trendy or cutting edge; just simple little classics like Boeuf Bourguignon, a fish filet in parchment, broiled chicken, fennel-apple-walnut salad, leek and potato soup.... the list goes on and on. You can almost imagine Julia Child (God rest her) fixing herself exactly these meals on the rare night when she wasn't being feted at one venue or another. This is a lovely little book, filled with "small plate" recipes and basic pantry/tool needs to have on hand. The writing is deft and enjoyable even if you don't know a sauce pan from a soup pot. If you find yourself single and like to cook, buy this book!

Planning your Meals in Advance is Key

One big issue with cooking for one is time. It seems a lot easier to pick up some takeout or order a pizza. But with the right planning you can whip up a meal in the same, or less time than it takes for your order to arrive! I have tested this and it's true (and cheaper and much healthier, too).

The key is not to spend a whole of a lot of time cooking every day, but to cook some items, which can be used in a variety of ways, in bulk. For example you can prepare a pot of Marinara sauce, healthy soup recipes and a pot of rice all at the same time. I takes very little prep time and almost no time attending the stove.

Watching football on Sunday? Perfect time to cook up some meals in advance. Just prepare some crock pot recipes! Crockpot recipes are easy to prepare and you can watch the game and not the stove!

Shopping wisely is another key to success. Have a plan, make a list and go to the store once a week (and stick to your list!)

The bottom line is, you can be successful in cooking for one. With a little planning you can serve up quick, healthy and cheap meals for yourself. Since you control the ingredients, a healthy home cooked meal beats out unhealthy takeout food, anytime!

Your Pantry - The Foundation for Success

Stock your Pantry right to save Money and prepare easy recipes!

In order to maximize your savings it is essential to have a pantry stocked with dry goods you'll use over and over again:

Some basic spices, whole grain rice and pasta. Some containers of chicken and beef stock, tomato paste (the base for most soup recipes or stew recipes) and low sodium Soy sauce for some Asian flavor. Add some ready made spice mixes, if you'd like (stir fry, taco seasoning, etc.). Also stock up on some canned goods, like refried beans for tacos, fruits and veggies.

Top it off with some taco shells, whole wheat tortillas and some bags of legumes, like beans and lentils and you're well on your way!

Start with a barebones setup and then add to it as you go. When shopping and a particular item is on sale, just by 2; use one and stock one. After a little while you'll have a well stocked pantry.

An Example of Cooking for one Person

Here's an example of how to put all this into action

OK, Here's an example for what you'll do:
Chicken Soup Recipe

On Sunday, get out your stock pot or better, your crock pot. Peel and cut up 2 carrots into slices. Next cut up 2 stalks of celery into slices. Now chop up a small to medium onion.
Now, put 2 pieces of chicken quarters into the bottom of your slow cooker, add the cut up veggies and add a container of chicken stock and about 8 cups of water. Season with salt and pepper, put the lid on the slow cooker and cook on low for 6 hours. When it's done, the chicken will float to the top. Towards the end of cooking add some dried or fresh parsley. Take out the chicken, remove the skin and, with 2 forks, shred all the meat and return it to the soup. When ready to eat, just cook up a batch of rice or pasta to add.

After the meal, portion the leftover soup into freezer soup containers and put into your fridge to cool and then into the freezer for some lunches. Refrigerate/freeze the leftover rice, as well.

While the soup is cooking, prepare tomato sauce recipe. When done, portion out and freeze. Use some for a homemade pizza for sauce; add your toppings and some shredded cheese and bake according to the instructions on your pizza dough.

Another night, fix some quick spaghetti. Heat up another portion of tomato sauce. Brown some ground beef and use half for the Marinara to turn it into a meat sauce or prepare my meatball recipe, refrigerate the rest for tacos another night.

The next night, defrost some frozen stir fry veggies, and slice some steak meat.
Stir fry with some soy sauce or stir fry seasoning and heat up the saved rice from the other night. Save the rest of the steak for steak and eggs on Sunday.

Ok, I think you get where I'm going with this. The key is to plan, so you can prepare some main ingredients you can use in different meals and on dinner night, just prepare some other things, quickly. For lunches, add some fresh fruit and/or yogurt for variety.

    I love rice, so I make a week's supply in my rice cooker. Most nights, dinner is a chicken breast with rice and veggies. I just change the seasons or sauce.
