This is one of my favorite slow cooker recipes and I have been making it for years!

Cooking for One Person: Beef Stew Recipe

Ingredients


  • 3 large celery stalks

  • 1 large onion

  • 4 or 5 carrots

  • 2-3 medium russet potatoes

  • 1/2 small bag frozen petite peas

  • 2 tablespoon ground coriander

  • 1 teaspoon salt

  • 1/4 teaspoon ground nutmeg

  • 1 bay leaf

  • 1/4 teaspoon dried thyme

  • 1/4 teaspoon coarsely ground black pepper

  • 3-4 pounda boneless beef chuck for stew, cut into 2-inch pieces

  • 1 can (14 1/2 ounces) stewed tomatoes

  • 3 tablespoon(s) all-purpose flour

Cooking for One Person Beef Stew Recipe Directions


  • Peel and chop onions into wedges

  • Peel and thickly slice carrots

  • Peel and slice celery

  • Peel and dice potatoes

  • Place all vegetables (except tomatoes) in 5 1/2- to 6 1/2-quart crock pot.
  • In a large bowl, combine coriander, salt, nutmeg, thyme, and pepper; add beef and toss to coat and add mixture to crock pot

  • Add bay leaf and tomatoes

  • Cook in crock pot on low for 8 - 10 hrs

  • Before serving, remove bay leaf and strain stew liquid into a saucepan and heat to boiling. While cooking mix flour with 1/4 cup water until smooth. Gradually whisk flour mixture into liquid and let boil for a minute or so, until liquid thickens. Pour liquid back into crock pot with beef and vegetables.

  • Enjoy.

The book is about cooking for oneself many nights of the week for possibly an extended period of time. This is a reality that anyone could find themselves in at one time or another. The essence of this book is how does one pare down and prepare interesting "Old Fashioned" dishes that one has made for most of one's life without wasting an abundance of food or caving into the frozen food section of the local supermarket. To that end I think it succeeds admirably. it's written with style, wit and panache by a lady who has edited some of the most skilled and well known food writers of the last 50 years. The menu items are just about perfect for my taste and decidedly not trendy or cutting edge; just simple little classics like Boeuf Bourguignon, a fish filet in parchment, broiled chicken, fennel-apple-walnut salad, leek and potato soup.... the list goes on and on. You can almost imagine Julia Child (God rest her) fixing herself exactly these meals on the rare night when she wasn't being feted at one venue or another. This is a lovely little book, filled with "small plate" recipes and basic pantry/tool needs to have on hand. The writing is deft and enjoyable even if you don't know a sauce pan from a soup pot. If you find yourself single and like to cook, buy this book!
