How To Store Mushrooms
Actually, the styrofoam tray covered with plastic wrap that mushrooms are packaged in at the grocery is fine for storing in the regfigerator. This packaging is already designed for storing mushrooms. Store outside of the crisper, and as long as the packaged is unopened they will stay fresh.Once the package is opened, or if you have bought loose mushrooms, you can store the them in a paper bag. A paper bag will absorb the moisture, unlike a plastic bag that will let moisture build up promoting spoilage. Also for these do not store in the crisper, store somewhere else in the fridge away from any strong smeilling foods that the mushrooms could absorb the odors.

Crab Stuffed Mushrooms Recipe
With Cajun Or Creole Seasoning And Parmesan Cheese!
- Serves: Makes 16 to 20 stuffed mushrooms
Ingredients
- 1 pound large mushrooms
- 6 tablespoons butter
- 3 minced green onions
- 3 to 4 tablespoons minced red bell pepper
- 4 ounces crab meat
- 1 cup fresh fine bread crumbs
- 1/4 teaspoon salt
- 1/4 teaspoon Creole or Cajun seasoning blend
- 1/8 teaspoon pepper
- 2 tablespoons Parmesan cheese
Instructions
Prepare the mushrooms by washing and trimming the end of stems. Remaining stem. Chop stems and set aside. Melt 2 tablespoons butter and brush over mushrooms. Spray a shallow baking dish (about 8-inch square, or one which will fit mushrooms in one layer) with butter-flavored spray or grease with butter.
Melt remaining butter in skillet and add reserved chopped stems, minced green onions and red bell pepper. Cook until vegetables are tender. Combine cooked ingredients with bread crumbs, crab meat, and seasonings. Fill each mushrooms generously. Sprinkle each mushroom with a little Parmesan cheese, if desired. Bake at 350° for 15 to 20 minutes, until hot and mushroom caps are tender.

Recipe For Marinated Mushrooms
Wih Garlic, Fresh Oregano & Thyme, And Shallots!

Ingredients
- 1 pound of brown or white mushrooms or mixed brown & white
- 1/2 teaspoon of salt
- 1/2 teaspoon black peppercorns
- 2 tablespoons finely chopper fresh oregano
- 1/4 teaspoon coriander seeds (optional)
- 2 cloves of minced garlic
- 1/4 cup finely chopped red onions or shallots
- 2 tablespoons finely chopped fresh thyme
- 4 tablespoons of good extra virgin olive oil (more if needed)
- 3 tablespoons white wine vinegar
Instructions
Prepare mushrooms by washing and popping out the stems. Boil mushrooms in salted water for about 10 minutes, then drain and cool. While mushrooms cool, combine all other ingredients in a jar, close the lid and shake until it's all combined. Add mushrooms, close lid and refrigerate overnight. Remove from the fridge at least 10 minutes before planning on serving it.
Battered Fried Mushrooms Recipe

- 10 ounces fresh clean white mushrooms
- 1 cup water
- 2 cups Panko breadcrumbs
- 1/2 cup cornstarch
- 1 cup flour
- 1/4 teaspoon salt
- 3/4 teaspoon baking powder
Instructions
Mix flour, baking powder, cornstarch and salt in a bowl.
Add water to make a batter.
Dip clean mushroom into batter letting excess batter drip off.
After dipping into batter roll in Panko breadcrumbs to coat.
Deep fry in oil until golden brown.

Recipe For Cream Of Mushroom Soup
Ingredients
- 8 ounces of sliced mushrooms
- 1 chopped medium sweet onion
- 2 cans (10-3/4 ounces each) chicken broth
- 1 cup heavy cream
- 1 teaspoon salt
- 1/4 cup flour
- 1/4 teaspoon white pepper or to taste
- 1/8 teaspoon ground nutmeg
- 4 Tablespoons butter - divided
Instructions
Clean mushrooms with a damp paper towel. Cut half of the mushrooms into slices and chop the remainder.
Melt half of the butter in a large saucepan and saute sliced mushrooms until done.
Remove and reserve sliced mushrooms. Add remaining butter to the same pan along with the chopped mushrooms and sweet onions. Sprinkle with salt. Cook, stirring often, until onion is translucent.
Return sliced mushrooms to the pan. Add flour and cook, stirring constantly for about 2 minutes until smooth. Slowly add chicken broth while stirring. Simmer, stirring often, until thickened. Add nutmeg and pepper. Taste and adjust seasoning if needed.
Add heavy cream and bring to a simmer. (Do not let boil.) Ladle into soup bowls and garnish with chopped parsley.
Recipe For Mushroom Pizza
With Spinach, Olive Oil, And Mozzarella Cheese!

Ingredients
- 1 12 inch pre-baked pizza crust
- 1 cup fresh sliced mushrooms
- 1 cup rinsed and dryed fresh spinach
- 8 ounces shredded mozzarella cheese
- 3 tablespoons olive oil
- 1 teaspoon sesame oil
Instructions
Preheat oven to 350 degrees. Place pizza crust on baking sheet.
In a small bowl mix together olive and sesame oil. Brush onto pre-baked pizza crust, covering entire surface.
Stack the spinach leaves, then cut lengthwise into 1/2 inch strips then spread evenly over crust.
Cover pizza with shredded mozzarella and top with sliced mushrooms.
Bake in preheated oven for 8 to 10 minutes, or until cheese is melted and edges are crisp.

Ingredients
- 3/4 pound small white mushrooms sliced in half and wiped clean
- 2 tablespoons chopped fresh flat-leaf parsley
- 3 tablespoons Unsalted butter
- 1/2 teaspoon Salt
- 1/4 teaspoon Fresh ground black pepper
- 1 tablespoon finely chopped garlic
Instructions
Melt butter in a skillet over low heat. Add garlic, salt and pepper and cook until fragrant, about 1 minute. Add mushrooms and toss with mixture to coat.
Cover pan and cook on low for 10 to 12 minutes, stirring occasionally, and make sure garlic doesn't burn.
Toss mushrooms with parsley just before serving.

Southwestern Mushroom Casserole Recipe

Ingredients
- Two 8-oz packages sliced mushrooms
- 1 tablespoon flour
- 1/2 teaspoon cayenne pepper
- salt to taste
- 1/2 cup parmesan cheese
- 1/2 cup bread crumbs
- 2 tablespoons butter cut into pieces
- 1/4 cup beef broth
- 1/2 cup heavy cream
Instructions
Preheat oven to 350 degrees.
Place the mushrooms in a 2-quart pie pan. In a medium bowl, combine the beef broth and flour. Microwave until slightly thickened. Stir in heavy cream and cayenne and season with salt. Immediately pour the sauce over the mushrooms.
In a medium bowl. mix together the breadcrumbs and parmesan. Sprinkle on top of the mushrooms, top with the butter and bake until browned, about 45 minutes.

Portabello Mushroom Burger Recipe
Ingredients
- 2 large portabello mushroom caps
- 1/4 cup soy sauce
- 1/4 cup olive oil
- 1/2 cup red wine vinegar
- 2 tablespoons Worcestershire Sauce
- 1/4 teaspoon liquid smoke
- 3 minced garlic cloves
- minced
- hot sauce to taste
- 1/4 teaspoon black pepper
- 2 large hamburger buns
- 2 slices cheese if desired
Instructions
Combine all marinade ingredients together. Place each mushroom in a shallow bowl, gill side up. Pour 1/2 of the marinade over each mushroom, pouring a little in the bottom of the bowl first, to wet the upside down cap, and the remainder into the upturned cap. Marinate for 5-10 minutes. Do not marinate longer as the mushrooms will absorb too much marinade.
Grill mushrooms on a wood or charcoal fire, or in a hot skillet on the stove top, or under a broiler. 2-3 minutes per side will usually do, or until the mushrooms are browned and tender. If desired melt a slice of cheese on top during the last minute or so of cooking. Serve on burger buns with toppings of your choice.

- This is a great lens! No wonder it got a purple star! I ate my first mushroom when I was 20 years old. Now I love them. My first mushroom was a portabella mushroom cooked on the grill with olive oil and garlic.
