Marshmallow Crisp Bars

- Serves: Makes 12 squares
- Prep Time: 30 minutes
Ingredients
- 6 cups Crisp Rice cereal
- 4 cups miniature marshmallows or 40 regular marshmallows
- 3 Tablespoons butter or margarine
Instructions
1. Melt butter over low heat in a large saucepan. Add marshmallows and stir until completely melted. Remove from heat.
2. Add Crisp Rice cereal, one cup at a time, stirring until well coated.
3. Press mixture into a 13 x 9 x 2-inch pan coated with cooking spray. Use a buttered spatula or buttered wax paper to prevent sticking while pressing mixture down. Cool completely. Cut into squares. Best if enjoyed the same day.

There are plenty of simple kitchen tools kids can use. A flat knife doesn't present much danger, especially through butter. Tiana was impressed to learn that butter has the tablespoons portioned out on the side of the label.

Mini Breakfast Pizzas
- Serves: 8 pizzas
- Prep Time: 30 minutes
- Total Time: 10 minutes
Ingredients
- 2 tomatoes (half of my kids left these off)
- 4 English muffins split
- 1 cup milk
- 1 teaspoon bottled chopped garlic
- 1 teaspoon salt
- 1 teaspoon ground black pepper
- 2 tablespoons butter
- 1 package of bacon (12oz) or ham (8oz)
- 2 cups shredded mozzarella cheese

Directions
Preheat oven to 350 degrees F. Line a baking sheet with aluminum foil; set aside. Have an adult slice tomatoes with a sharp knife.
Working in batches, toast the English muffin halves in a toaster; carefully remove English muffins from toaster. In a medium bowl, using a whisk, combine eggs, milk, garlic, salt, and pepper; set aside.
Place butter in a large nonstick skillet. Place on burner; turn burner to medium. Heat until butter is melted. Add egg mixture to skillet. Using a heat-resistant spatula, flip one part of the egg mixture at a time until all the eggs are cooked. Remove from heat.
To make pizzas, arrange English muffin halves on prepared baking sheet. Top each English muffin half with 1 to 2 tomato slices,2 to 3 slices of ham or bacon, and 1 cup of the egg mixture. Sprinkle each with 1 cup cheese.
Place baking sheet in oven. Bake for 10 minutes or until cheese is melted and bubbly. Using oven mitts, remove from oven. Place baking sheet on wire rack; cool for a few minutes. Using the spatula, transfer mini pizzas to dinner plates.

Jamie is nine and has a long history of helping me in the kitchen. His previous best work was in kabob assembly. He also makes a mean English Muffin Pizza. Together we helped make Tiana's special day just a little bit sweeter.
Preparing the Cookies for Our Ice Cream Sandwiches.
This recipe is for the lazy chef in all of us. You sa start with a package of cookie mix. Add an egg, a stick of butter, and mix together.
Easy Ice Cream Sandwiches
- Serves: 8
- Prep Time: 10 Minutes
- Total Time: 20 Minutes
Ingredients
- 1 17.5 ounce package of chocolate chip cookie mix
- 1 large egg
- 1 stick of butter
- 1 Container of your favorite ice cream
- 1/2 cup of mini M&Ms
- mini chocolate chips
- or crushed nuts
Instructions
1. Preheat the oven to 375 degrees.
2. Mix the cookies per package directions.
3. Drop the dough in teaspoons onto ungreased cookie sheets, two inches apart.
4. Bake for 8-10 minutes.
5. Allow the cookies to cool completely on a wire rack.
6. Place a scoop of ice cream on the flat side of one cookie. Top with a second.
7. Roll the ice cream sandwich, side down, in the topping of your choice.
8. Wrap in plastic wrap and place in the freezer for 30 minutes if too soft.
