we like to cook They were always a hit!
with lots of rum!
Rum Balls:
1 1/2 cups toasted pecans; finely chopped (Any other nut of your choice can be used)
1 1/4 cups finely crushed shortbread or vanilla wafer cookies
1/2 cup powdered sugar
2 tablespoons cocoa powder
2 tablespoons light corn syrup
1/4 cup rum
Garnish:
1/2 cup powdered sugar, sifted
Crush the vanilla wafer cookies or shortbread cookies in the food processor or by hand in a bag until finely ground. Add the crumbs to the finely chopped pecans. To this mixture add the powdered sugar and cocoa powder and stir until combined. Add the corn syrup and rum and mix well. Chill if necessary and then shape into 1 inch balls. Place the sifted powered sugar into a small bowl and roll the rum balls in the sugar.
Store in an airtight container in the refrigerator. Best if made several days in advance of serving to allow the flavors to mingle.
Serve at room temperature.
Makes about 4 dozen.
Peanut Butter No Bake Cookies easy to make and good!

Boil for one minute: 2cups sugar, ½ cup milk, and ¼ pound butter.
While hot stir in: ¾ cup peanut butter, 3 cups Quaker oats, 1 cup nuts, 5 tablespoons cocoa, and ½ teaspoons vanilla.
Immediately drop on to wax paper in cookie shape. Makes 60 medium sized drop cookies.
