Children in the Kitchen

 

Hello. My name is Michael and I have been in the foodservice industry for a little over 12 years now. I went to school to become a certified chef/nutritional consultant.
Teaching your children their way around the kitchen is one of the most valuable things you can ever add to their lives because of all it involves from the purchasing of the food to the preparation, cooking, and the fun part... eating it. This is also very useful information for babysitters looking for projects to do with the children they are watching.

Okay, first I'm going to go over a few food safety guidelines for you then we'll get to the recipes.

#1 cold foods need to be kept at less than 40 degrees and not sit at room temperature for more than 4 hours...after this time the amount of bacteria on the food is in the billions!!!
#2 Ground meat, pork, and poultry need to be cooked at least medium well(155 to 165 degrees) to kill pathogens.
#3 After cooked, hot foods need to be held at at least 135 degrees to prevent the growth of bacteria.
#4 Leftovers and foods that are going to be reheated need heated to 165 degrees to kill off any bacteria.
#5 If you don't have a food thermometer here are 2 rules of thumb:
- Hot foods should produce very visible steam
- Cold foods should be very, very cold.

Cooking with your children 

PICASSO TOAST
Ingredients:
milk
cinnamon (optional)
food coloring
toast

Directions:

1. Fill 5 glasses with a 1/4 cup of milk

2. Then take your 5 food colorings and in each glass put 5 drops of food coloring in the milk and stir till color shows.
3. Use a small paint brush and dip the brush into the food coloring. Then take your piece of bread and paint a face or picture of choice on it.

4.Now place your bread into a toaster and wait till the bread is toasted.

5. Butter lightly to give taste

6. ENJOY!!!

(ADD A PINCH OF CINNAMON TO THE MILK AND MAKE "PICASSO CINNAMON TOAST")

BREAKFAST PIZZA

Ingredients:

Pizza Dough (buy the pre-made)

shredded cheese - your favorite)

eggs

sausage or your favorite breakfast meat

Directions:

NOTE: preheat oven to 350*

1. Whip eggs in a bowl with a little water. Chop up sausages and add to eggs.

2. Mix in shredded cheese.

3. Spread pizza dough out on a cookie sheets. Make a small "lip" around the edge of the dough so the mix doesn't run off.

4. Gently pour the eggs, sausage and cheese mix onto the pizza dough. Place in pre-heated oven. Cook for approximately 25 minutes. Dough should be done and eggs thoroughly cooked.

( THIS IS AN AWESOME DISH TO SNEAK SOME VEGGIES INTO - JUST FINELY CHOP SOME SPINACH, COLLARDS, OR OTHER GREENS, ZUCCHINI, ONIONS, TOMATOES, MUSHROOMS, BELL PEPPERS....THE SKY IS THE LIMIT AND SET IT OUT WHEN DRESSING YOUR PIZZAS)

MUFFIN PAN EGG SANDWICHES

Ingredients:

1/4 Cup Milk

3 Eggs

6 Cooked Sausage Patties/Slices Of Ham/Pieces Of Bacon

6 Slices Of Cheese

6 Cooked Biscuits

Directions:

1. Preheat oven to 350 degrees.

2. Stir eggs and milk together. Fill 6 muffin tins with egg mixture. Bake for 20-25 minutes.

3. Cut biscuits in half. Place egg, cheese and sausage between biscuit halves.

( HERE IS ANOTHER AWESOME PLACE TO SLIP IN A SLICE OF ZUCCHINI, SQUASH, EGGPLANT, TOMATO, SOME SPINACH OR LETTUCE LEAVES, OR EVEN SOME FINELY CHOPPED RUTABEGA)

FRUITY OATMEAL

Ingredients:

2 cups water
1/4 teaspoon salt
1 cup rolled oats
1 cup chopped peeled peaches or chopped apple
1/4 cup dried cherries, raisins, or snipped pitted whole
dates
1/8 teaspoon ground cinnamon
1/2 cup skim milk

Directions:

In a medium saucepan bring water and salt to boiling.

Stir in oats, peaches or apple, raisins, and cinnamon.

Reduce heat and simmer, uncovered, for 5 minutes, stirring occasionally.

Remove from heat. Cover and let stand for 2 minutes.

Divide oatmeal among 4 bowls.

Pour 2 tablespoons milk over each serving.

Makes 4 servings.
