The cool days, brisk nights, the rustling of leaves that have begun falling to the ground, along with trees of green magically changing into hues of red, orange, and gold are all signs that the long awaited Fall Season has finally arrived!

This magical season makes people everywhere want to be outdoors. The air is so fresh and crisp. The weather is so invigorating! Many people take this time of the year to get away from the hustle and bustle of everyday life and go camping for relaxation. And as you know ,vacations and camping always seem to make you hungrier!

FAMILY FUN

Camping is a fun family oriented recreation. It is a great way to connect with your children. The antics of the raccoons,the hooting of the owls, chirping squirrels,singing birds and an occasional sighting of a deer in early morning or late afternoon delight the adults as well as the children.

We are from Louisiana and when our children were young we made several weekend camping trips. Summer camping is also a lot of fun but, camping in the Fall is our all time favorite. Chicot State Park and Indian Creek were the places we camped at most of the time.

Camping always seems to magnify your appetite. Besides the usual hot dogs and hamburgers, I usually prepare a good ole fashioned chili to bring along. I would like to share my recipe with you.

MY RECIPE FOR YOU

SPICY CHILI

INGREDIENTS:

3 lbs. ground beef
1 onion
1 bell pepper
2 stalks celery
2 pks. hot chili mix
1 lg. can v-8 juice
1 lg. can diced tomatoes
4 cans chili beans
salt, red and black pepper

DIRECTIONS:

Brown ground beef and drain fat. Add diced up onion, bell pepper, celery and cook till vegetables are wilted. Add v-8 juice and diced tomatoes along with both packs of hot chili mix. When mixture comes to a boil, reduce heat to medium and cover pan. Let cook for about 45-50 minutes,stirring occasionally. Add 4 cans chili beans. Let simmer for about 30 minutes. Serve with crackers or corn chips and shredded cheddar cheese. ENJOY!!!

Hi! My name is Judy, mother of three and grandmother of ten. We still like to camp...only not quite as often. The grandchildren seem to be so fast or we are getting slower! My husband says it is the grandchildren. LOL

Camping in Louisiana is more enjoyable during the Fall because the mosquitoes are less THREATENING! We have two types of mosquitoes here...the itty bitty ones that can fit through your screen and the really big ones that can knock it down!!!
