Ingredients:
- 3 large potatoes, peeled,sliced and placed
in cold water - 1/4 teaspoon chopped thyme
- 1/4 teaspoon chopped chili
- 1/4 teaspoon white pepper
- 1 tablespoon chopped fresh parsley
- 1 garlic clove, peeled
- 2 eggs,beaten
- 175ml milk
- 125ml double cream
- salt
- butter
"Parsley"

"Thyme"Method:
1. Preheart oven to 180C
2. Drain Potatoes and dry slices well. Place in bowl.
3.Mix cayenne pepper, white pepper and parsley together. Add to potatoes and mix.
4.Rub baking dish with garlic clove. Butter dish generously and arrange potato slices in layers. Season with salt.
5.Mix eggs, milk and cream together. Pour over potatoes. Bake in oven for 40 to 50 minutes. Serve

Pasta And Mushroom Cheese Casserole
Serves 4
Pasta And Mushroom Cheese CasseroleIngredients:
- 30g butter
- 2 shallots,peeled and chopped
- 350g fresh button mushrooms, cleaned and sliced
- 3 tablespoons vinegar
- 4 tablespoons flour
- 750m milk, heated
- 1/2 teaspoon white powder
- 450g cooked pasta, hot
- 100g grated mozzarella cheese
- pinch nutmeg
- salt and pepper

"Button Mushroom"Method:
- 1.Pre-heat oven to 190c
- 2.Heat butter in saute pan over medium heat. Add Shallots and mushrooms. Season and cook 5 minutes. Incorporate sherry and continue cooking 3 minutes.
- 3.Add flour, mix well and cook 2 minutes over low heat. Whisk in hot milk, season with salt, nutmeg and white pepper. Cook 12 minutes over low heat, stirring frequently.
- 4.Add pasta to sauce and mix well. Transfer mixture to buttered baking dish. Top with mozzarella cheese and cook 10 minutes in oven.

Tomato Mushroom Chicken

Method:

- 75g flour
- 1.6kg chicken, cleaned and cut into 8 pieces
- 30g butter
- 450g button mushrooms,cleaned and halved
- 1 tablespoon oil
- 1 large onion, diced large
- 800g canned tomatoes, drained and coarsely chopped
- 1 tablespoon curry powder
- 1 teaspoon oregano
- salt and pepper
- paprika
- few drops Tabasco sauce
"Tabasco Sauce"
"Onion" Method:
- 1.Mix flour with salt, pepper and paprika; dredge chicken pieces in flour mixture.
- 2.Heat butter in large frying pan over medium heat. Add chicken and cook for 15 minutes, turning pieces over twice.
- 3.Add mushrooms, season and continue cooking 10 to 12 minutes.
- 4.Meanwhile, heat oil in frying pan over high heat. Add oinion and cook for 4 minutes. Add tomatoes and all seasonings including tabasco sauce; cook for 8 to 10 minutes over medium heat.
- 5.Spoon mixture over chicken and serve.

Ingredients:
- 2 slices white bread, crusts removed
- 50ml milk
- 450g crab meat, fresh or frozen and thawed, flaked
- 3 spring onions, chopped
- 4 tablespoons mayonnaise
- 1 teaspooon Worcestershire sauce
- 1 teaspoon dry mustard powder
- 1/4 teaspoon chili
- juice of 1/2 lemon
- salt
- peanut oil
"Lemon Juice" Method:
- 1.Place bread in bowl and cover with milk. Soak for 5 minutes
- 2.Squeeze out excess milk from bread and place in clean bowl. Add remaining ingredients to bread and mix well. Cover and refrigerate for 2 hours.
- 3.Shape mixture into thick pancakes. Cook hot peanut oil over medium heat, about 4 to 5 minutes or until nicely browned.
- Serve with fresh lemon

Tiramisu Cheese Cake

Method:

- 1 piece of thin sponge cake
- 1 tablespoon instant coffee powder
- 1/4 cup almond liqueur
- 8-10 biscuit fingers
- cocoa powder to taste
Cream Filling:
- 12g gelatine
- 150m fresh milk
- 100g sugar
- 1/4 teaspoon salt
- 3 eggs-yolks
- 300g mascarpone cheese
- 500g whipped cream
Seasoning
- 100g sugar
- 1/2 cup water
- 1/4 cup orange liqueur

"Coffee Powder"Method:
- 1.Cream filling: Soften gelatine in iced water. Remove and drain. Heat gelatine indirectly over hot water till gelatine melts.
- 2.Bring fresh milk to boil, then stil in sugar, salt and egg-yolks. Add melted gelatine. Allow mixture to cool over a basin of iced waters.
- 3.Blend mascarpone cheese in mixing bowl till cheese is soft, smooth and not lumpy. Stir in milk mixture (from Step 2) followed by whipped cream.
- 4.Line 11 x 9 x 2 baking tin with cling wrap. Pour in 1/3 cream filing and level surface.
- 5.Mix Seasoning together. combine 70ml Seasoning with instant coffee powder, almond liqueur and 100m boiling water to make syrup.
- 6.Dip biscuit fingers in syrup and arrange in baking tray. Spread on another layer of cream filling. Repeat this step till all ingredients are layered. Top with sponge cake. Refrigerate till solidified.
- 7.Remove tiramisu and sift cocoa powder onto surface and serve.

* 4 each chicken legs and thighs, fat trimmed
* 3/4 cup water
* 2 tablespoons cooking oil
* zest from 1 orange
* segments from 1 orange

Method:

- 4 large potatoes;peeled and cubed
- 1/2 onion, finely chopped
- 1/2 celery stick, diced
- 750ml water
- 1 liter milk, heated
- 1 teaspoon chervil
- pinch of nutmeg powder
- salt and pepper

- 1.Place potatoes, onion and celery in saucepan. Add water and season with salt and pepper. Partly cover and bring to boil. Cook 18 minutes over medium heat or according to size of potatoes. Potatoes should be fully cooked.
- 2.Drain vegetables,reserving liquid in pan and set aside.
- 3.Turn off heat. Pour milk into saucepan and stir. Add cooked vegetables, nutmeg, salt and pepper. Cook for 4 minutes over very low heat.
- 4.Sprinkle with chervil and serve.

- 4 portions cooked spaghetti
- 1 tablespoon chopped chopped fresh parsley
- 45 butter
- 100g grated Parmesan cheese
- 4 eggs, beaten well
- salt and pepper

- 1. Place hot spaghetti in mixing bowl. Season with salt, pepper and parsley. Add 2 tablespoons of butter and mix. Add cheese and mix again.
- 2. Set spaghetti aside to cool. Stir twice during cooling.
- 3. Season beaten eggs, then pour over spaghetti. Mix well.
- 4. Heat remaining butter in large frying pan. Stir spaghetti in bowl, then pour into pan. Cook for 2 to 3 minutes over medium heat.
- 5. Flip omelette over. Continue cooking for 3 minutes. Serve.

- 1.2kg lamb shoulder; trimmed of fat and cut in 2.5-cm cubes.
- 4 tablespoons season flour
- 2 tablespoons olive oil
- 1 large onion, sliced
- 2 agrlic cloves, smashed and chopped
- 750ml beef stock,heated
- 4 tomatoes,quartered
- 3 potatoes,peeled and quartered
- 90 black olives
- 1 large red capsicum,cubed
- salt and pepper
- 1. Pre-heat oven to 180c.
- Dredge meat in flour. Set aside.
- Heat oil in ovenproof saute pan over high heat. Add onion and garlic; cook 6 minutes over low heat, stirring once. Remove onion with metal spatula and set aside.
- 4. Add meat to hot pan. Sear 6 to 8 minutes over medium heat; season well. return onion to pan and mix well.
- 5. Pour in beef stock and add tomatoes. Mix well and season with salt and pepper. Bring to boil. Cover pan and cook 1 hour in oven.
- 6. Add potatoes and olives to stew. Cover and continue cooking 1 hour in oven.
- 7. Add peppers, cover and finish cooking for 15 to 20 minutes. Serve.

Banana & Bread Pudding

- 2 slices bread
- 2 bananas
- 3 eggs
- 20g butter
- several moulds
Seasoning A:
- 1 tablespoon lemon juice
Seasoning B:
- 3 tablespoons sugar
- 1/4 teaspoon salt
- 1 teaspoon vanilla essence
- 1/2 cup yoghurt
- 1 tablespoon raisins

- 1. Trim off edges of bread, then cut bread into halves. Soak in cold water till soft. Removes and squeeze dry.
- 2. Peel bananas and cut into slices. Put into plastic bag together with Seasoning A, then mash.
- 3. Beat eggs in bowl then stir in Seasoning B. Add bread and mashed banana. Stir well to form batter.
- 4. Brush butter over interior of round cake tins. Pour in batter till 80% full. Transfer cake tins into steamer and steam over high heat for 15 minutes. Drizzle with chocolate sauce or sugar syrup before serving.

- 1/4 teaspoon sesame oil
- 1 teaspoon sugar

- 1. To make bean-curd, mix the bean-curd ingredients lightly, strain well, prepare a 8-inch-square tray with lined cellophane paper. Pour in the mixture slowly. Stream in pre-heated steamer over low heat for 20 minutes. Remove and leave to cool.
- 2. Deep-fry the bean-curd into hot oil over medium heat until golden brown. Dish-up and drained.
- 3. Leave 2 tablespoon oil in a pre-heated wok to saute chopped, minced pork and chopped pickled radish, stir until aromatic. Add in seasoning, stir-fry for a while. Remove and sprinkle with chopped onion and red chili on top. Serve hot.

- 1 teaspoon Worcestershire sauce
- 450 lean minced beef
- 450g lean minced beef
- 350g minced veal
- 2 eggs
- 1/2 teaspoon thyme
- 1 teaspoon basil
- 1/4 teaspoon chili
- 1/2 teaspoon black pepper
- 1/4 teaspoon ground cloves
- 1/4 teaspoon chili powder
- 60g fine white breadcrumbs
- 3 tablespoons evaporated milk
- 3 tablespoons chili sauce
- salt

- 1. Heat oil in saute pan over medium heat. Add vegetables and galic; mix and cook 6 minutes over low heat. Stir in lemon zest and Woncestershire sauce; continue cooking 2 minutes. Remove vegetables
from pan and set aside. - 2. Pre-heat oven to 180c
- 3. Placed all minced meats in food processors. Season with salt and blend 15 seconds. Add eggs and blend 1 minute.
- 4. Mix seasoning together and add to meat in food processor. Add breadcrumbs,evaporated milk and chili sauce. Blend 15 minutes.
- 5. Transfer mixture to bowl. Add cooked vegetables and mix with spoon. Press mixture into meat loaf baking tin.
- 6. Set mould in roasting tin containing 2.5cm of water. Place in oven and cook 50 minutes, uncovered.
- 7. Increase heat to 200c and continue cooking 6 minutes.
- 8. Slice and serve with fresh vegetables and a spicy sauce.

METHOD:
- 1. Place egg-yolks in stainless steel bowl. Add sugar and beat with electric hand mixer until thick
- 2. Place saucepan half-filled with hot water on stove over low heat. Set bowl containing egg-yolks over saucepan. Pour in wine and beat for 8 minutes or until thickened.
- 3. Remove bowl from saucepan and continue beating with electric hand mixer till cold.
- 4. Gently whisk whipped cream into mixture. Serve in large dessert glasses and garnish with chocolate shavings or fresh fruit in reason. Strawberries and mangoes are ideal.

- 1/3 teaspoon ground ginger
- 1/4 teaspoon allspice

- 3 garlic cloves, smashed and chopped
- 8 lamb chops, 2.5cm thick, trim off fat
- salt and pepper

- Place all ingredients, except lamb chops, in saucepan. Boil 10 minutes.
- Place lamb chops in deep glass dish and pour sauce over. Marinate 1 hour.
- Pre-heat barbecue at medium-heat.
- Oil grill and add lamb chops. Cover and cook for 6 to 7 minutes on each side. After meat is seared, season well and baste with marinade during cooking.
