Mexican - Baked Fish

Okay so it's not authentic Mexican culture fare but this recipe is a no-brainer, perfect for beginners!

So this isn't 'authentic' Mexican food but I'm adding it to the lens FIRST because it's so easy to make, it's healthy, and even beginner cooks can make this without creating a disaster in the kitchen!

A Safety tip before you start: when you work with raw fish, be prepared to wash your hands A LOT, and definitely before you move on to prepping or touching other foods or even other utensils you'll be using for the meal.

Ingredients for this easy dish:

* 1 to 1 and a half pounds of cod fillets (red snapper works nice with this recipe as well!)
* 1 cup of salsa (most 'snack jars' of ready-made salsa are a decent size and will work for this recipe)
* 1 cup of sharp cheddar (Monterey Jack is an awesome substitution, too)
* A Half cup of coursely crushed corn chips
* Set aside another LARGE BOWL of Corn Chips
* Set aside about a half cup - or half jar of Salsa
* An avocado, peeled, pitted and sliced
* A Half cup of sour cream

Prep Details - Move the LARGE BOWL of corn chips and the half cup/jar of Salsa FAR AWAY from you while you're working with the raw fish...the chips and salsa are for snacking on - just in case, but you DO NOT WANT TO reach for this until you're done working with the raw fish!

Directions:

* Pre-heat your oven to 400F (200C)
* Grease (lightly) 8x12 Baking Dish
* Rinse fish in cool water, then pat dry with clean paper towelling
* Put fish in baking dish, spreading the pieces evenly side by side
* WASH YOUR HANDS - Don't spread the (bad) bacteria (if present) from the fish to other steps!
* I'm serious - WASH YOUR HANDS, put any paper towelling (into garbage) or utensils (into soapy sink) you used with the fish into the appropriate place before you move on!
* Pour Salsa evenly over fish in the baking dish
* Sprinkle Cheese (Cheddar or Jack) over fish and salsa
* Top with the crushed corn chips

* POP THE BAKING DISH INTO THE HOT OVEN (Be careful, use oven mitts) - Bake Uncovered 15 minutes.

* Go find your bowl of corn chips and salsa and SNACK ON THEM for a few minutes...if you really need to!

When the fish is 'opaque' and flakes readily with a fork, your meal is done!

Top with avocado and sour cream at the table and

VOILA!

Easy to prep, easy to cook Mexican Baked Fish!

Nice side-dishes that compliment this dish are:

Rice, Fried Potatoes

- or you can just top the side of your plate with more corn chips and salsa!

Mexican Rice To Compliment Mexican Fish Bake

Ingredients:

3 tablespoons vegetable oil
1 cup uncooked long-grain rice
1/4 cup green/orange/red pepper
1/4 cup chopped onion
1/2 cup tomato sauce
2 cups chicken broth

Spices:
1 teaspoon garlic salt
1/2 teaspoon ground cumin
1/8 teaspoon chili powder (or just a couple of pinches)

Directions:

Use a large saucepan - heat the oil and add rice once the oil is heated to about medium heat.

Stay by the stovetop for the above part. You should stir the rice constantly while it is cooking. Cook until it is puffy and golden brown. Sprinkle with cumin and salt while it is cooking.

Stir in the green/red/pepper and the onions. Cook these until they are tender. Sprinkle in the chili powder and blend in, right before adding the next ingredients:

Stir in the tomato sauce

Stir in the chicken broth

Bring this to a boil - then pop a lid on the pot, lower heat to "low" setting, and simmer for 25 minutes or so.

Fluff with a fork just prior to serving.
