A Delicious Any Time of Year
The first time I made it, it was for our annual Thanksgiving get together years ago, and I've made it for Thanksgiving ever since, and sometimes for Christmas. In the late summer here in the State of New Jersey, corn is harvested in the late summer, and might I brag a bit and say the New Jersey has delicious Jersey corn:-). The corn stalks, and dried corn, then become part of the decorations of Halloween and Thanksgiving, so although this is good any time of the year, it fits the fall season nicely.
Ingredients:
Things you are going to want to gather to prepare this recipe.
2 15+ oz. cans of corn, drained1 medium head of cabbage, washed, chopped into bite-sized pieces
1/2 Cup Chopped Onion, green or white, your choice
8 oz - 1 lb of cubed sharp cheddar cheese
1/4 - 1/2 Cup of Sliced Black Olives
1 Chopped Red Pepper (flavor and color)
Salt & Pepper to taste
1/2 Cup Light Mayo (or enough to coat all ingredients, but don't over-coat)
Fresh Parsley Leaves

Preparation:
It's so easy!!
I like to make this the day or evening before it is going to be served so that the flavors have time to blend while it cools in the refrigerator.
Before you serve it, give it a gentle stirring, add a little more mayo if it needs it, and decorate the top with sprigs of washed parsley if you like.

- I'm looking for a side dish to bring to Thanksgiving this year, when we'll be guests yet again. I think I'll try this! Whether it ends up being THE side dish we bring doesn't matter; it sounds really good! And simple enough for me--who can't cook very well--to handle.
