There is nothing like a warm bowl of Corn Chowder

I am sharing a recipe for Corn Chowder that we make all the time (ok my husband makes it). I love it the most in the fall and winter when it is brisk outside and bowl of Chowder tastes so much better when it warms your belly. I love thick and creamy soups and this is one of them - with a side of biscuits that is all you need. So I hope you will take the time to try this favorite and have it become one of those recipes that makes it into your recipe book.

The other thing about this Chowder is that it is so versatile - you can add in more veggies, chicken, use fresh corn from the cob or add more spices to suit your tastes. But I am going to share how we like it.

My Corn Chowder Recipe 

Did I mention this is so Budget Friendly?

I always double my recipe when making this so we have lots of leftovers - this list is not doubled.



Ingredients Needed:
  • 4 Tablespoons Butter
  • 1 Medium Onion Chopped
  • 1 Red Pepper Chopped
  • 1/3 Cup All Purpose Flour
  • 3 Cans (14 1/2 oz) Corn - You can sub fresh corn here too
  • 2 1/2 Cans of Chicken Broth
  • 1 1/2 Cups Heavy Cream
  • Bay Leaves
  • 1/2 Teaspoon Thyme Leaves (I usually sprinkle in some ground Thyme)
  • Instant Mashed Potato Flakes - We like to add these in to thicken it up
  • Salt, Pepper, Crushed Red Pepper to taste.

Chop up your Peppers and Onions

Melt Butter in the Pot

Add in Peppers and Onions and cook until soft not brown

Slowly add your flour and stir in well

Then add in all your Chicken Broth

Then all the Yummy Corn

Now add your Thyme and other spices

Pour in the Heavy Cream

Now add some Bay Leaves (make sure to take them out before eating)

Cover and bring to a boil

When boiling you can add in your Mashed Potato Flakes to thicken it up

Now uncover reduce heat and simmer, stirring occasionally for about 20 minutes

Keep cats busy while you wait for dinner

Bake some Bisquits to go with your Chowder

Serve to the Hungry Kids

Let them enjoy

Chowder Bowls 

It is important to also have a good big bowl when eating your Chowder. The bowls I use come from Williams and Sonoma and are white porcelain chili bowls - they are extra large and can hold 28 ounces. They were a gift to me and have become my favorites and we use them for everything.

Recipe Storage 

I have a special cookbook that was given to me at my bridal shower so many years ago. I use this book for recipes that we love and make over and over again. Recipes from other family members go in there as well. This book will be handed down to my kids. I also make little notes in there too - so it will be fun for them to use when they have their own families. I also have a box of recipes that contains index cards of recipes from all who attended my bridal shower - that is really neat too.
