    Interesting to learn about the history of cornbread. I make a sweet cornbread using honey. But, although I don't make it myself (must try making it someday...), I also enjoy savory cornbread.

    I admit, we've never made homemade corn bread but we do eat Jiffy at least once a week. It is a great bread to have fresh and warm with a lot of meals, and so quick it's almost shameful. :) I'm tempted to try making homemade cornbread now though. Nice lens, really enjoyed reading this.

    I'm so glad you promote Jiffy. I used to make cornbread in my Easy Bake Oven with that mix. It's just as good today. Now we use our Lodge pans and make a big batch.

    baked in a cast iron skillet is the best with niblet corn mixed in the batter

    Nice lens. A friend told me about adding a can of cream corn to help keep the cornbread moist. Thanks for the information and the history of cornbread.

    Opps! Already shared mine fave idea in the earlier poll, I love jazzing up cornbread with mild canned chilis & cheese, or adding cream corn for a chunkier texture. And I cook them up in a vintage cast iron corn bread sticks pan (makes each biscuit look like an ear of corn) which holds yummy childhood memories of my mother's baking and love.

    i'd also recommend jeff hamelman's leavened cornbread recipe in his classic bread techniques book...tends to cook a bit faster on the bottom but still comes out great

    Oh, there was nothing like my mom's chili and cornbread! I've tasted other cornbreads, but nothing's as good. :)

    Great Lens! Here in the Sunny South cornbread is a seperate Food Group! Cast Iron pans are the way to go for sure. Come visit!

    I absolutely LOVE cornbread. A co-worker gave me the best recipe but it had too much butter and sugar, which I had to doctor. Great lens!

    I'm a Southern girl, so I know all about cornbread. You are right. Cast iron skillets make for the best. My favorite dish is cornbread dressing. Yummy! Great lens!
