Best tasting cornbread you'll ever eat!

An easy cornbread recipe that makes will make your happy country heart sing! Over 10 years ago I came across this recipe out of one of those fundraising cookbooks published by California Home Economics teachers. The recipe was called Special Cornbread, with the boast "this recipe looks and tastes just like Marie Callender's, If you've ever tried Marie's you know her delicious sweet cornbread tastes just like cake!"

Special Corn Bread

Easy cornbread recipe using buttermilk baking mix!

Makes 12 squares

  • 2 cups buttermilk baking mix
  • 4 to 6 T cornmeal
  • 1 cup sugar
  • 2 eggs
  • 1 cup milk
  • 1/2 cup butter, melted


Combine baking mix, cornmeal, and sugar.
Add eggs and milk; beat until well blended.
Mix in melted butter.
Place in a greased 9 inch square pan.
Bake at 350 degrees for 35 to 40 minutes or until wood pick comes out dry.

Marie Callender's (Official Copycat) Cornbread Recipe

Ingredients

1 1/4 cups flour
3/4 cup cornmeal
2 teaspoons baking powder
1/3 cup sugar
3/4 teaspoon salt
1 1/4 cups whole milk
1/4 cup shortening
1 egg

Honey Butter
1/2 cup butter, softened
1/3 cup honey

Directions

Preheat oven to 400 degrees F.
Combine all the dry ingredients in medium bowl.
Add the milk, shortening, and egg and mix only until all the ingredients are well combined.
Do not overmix.
Pour the batter into a greased 8x8-inch pan.
Bake for 25-30 minutes or until top is golden brown.
Let cool slightly before slicing.
Slice with sharp knife into 9 pieces.
Serve warm with honey butter, if desired.
For the honey butter, use a mixer on high speed to whip the butter and honey together until smooth and fluffy.

The National Cornbread Festival

A small town (South Pittsburg, Tennessee) hit by hard times comes up with a great idea to make lots of money - The National Cornbread Festival!
Since the Festival began they have landscaped streets and built ball fields, supported boy scouts, schools, and churches. People come from all over the United States to see the sights and hear the music, feel the history and taste the delicious cornbread that is cooking in this little Tennessee town. Their formerly "closed" buildings are once again occupied with restaurants and new stores, and the small town has come back to life, thanks to a great idea and a genuine love for cornbread.

Men who love to cook, like my father did, didn't go in for fancy shaped-pans and often made homemade cornbread right in his well-loved cast iron skillet. A great cast iron pan is virtually indestructible and should last for generations. An important kitchen family heirloom!

Sweet Cornbread or Salty?

In the South they love it salty and in the North they love it sweet! A preference for adding sugar or molasses can be found in both regions, but saltier tastes are more common in the South, with the yummy (but fattening) addition of frying the bread with bacon drippings. The Northern (referred to in the South as "Yankee Cornbread") tends to be sweeter and lighter than southern style cornbread, using half wheat flour and half cornmeal.
