My Easy Recipe For Tasty Coronation Chicken (Or Turkey)

This is a really easy and tasty recipe for Coronation Chicken.

There does seem to be some confusion over the origins of Coronation Chicken, but generally it is believed to have been created by Constance Spry and Rosemary Hulme for the Coronation of Queen Elizabeth II in 1953. Coronation Chicken consists of cooked chicken in a creamy curry sauce that can be used in sandwiches, in a salad, or my favourite, on a baked potato.

The Coronation Chicken works just as well if you substitute the chicken with cold cooked turkey!

Ingredients You Will Need To Make The Coronation Chicken Recipe

The recipe makes enough Coronation Chicken for two servings but the ingredients can easily be adjusted for more servings

  • 1 medium,cooked, chicken breast, shredded. (Use any part of the bird you choose, but an amount equivalent to 1 breast.)

  • 2 spring onions, sliced

  • ½ apple - peeled and cubed

  • Large knob of butter or ghee (Indian clarified butter, available in many supermarkets)

  • 1tbsp of curry paste.... See below

  • 150ml red wine, or white if that's all you have

  • Small handful of sultanas

  • 1tbsp of jam. (any you like but avoid types with small pips. Try apricot or blueberry)

  • 1 tbsp mayonnaise

  • Yogurt or crème fraiche to taste. (This really depends on what you're using your Coronation Chicken for. You'll want it to be quite stiff for sandwiches, less so for a baked potato. You'll probably want to use between 1 ½ and 4 tablespoons)

  • Seasoning to taste

The Quick Curry Paste Recipe I Use To Make The Coronation Chicken

  • 1 garlic clove, crushed

  • Level tsp cumin powder

  • ½ tsp turmeric

  • Level tsp tandoori powder

  • ¼ tsp hot chilli powder ( or more if you dare!)

  • ½ tsp garam masala

  • ½ tsp ground ginger


Normally I would mix the spices into a paste with a small amount of vegetable oil before adding it to a dish, but, as there will be quite a lot of butter or ghee in your saucepan, just stir the above ingredients in.

Pataks Balti curry paste makes a fantastic, simple alternative. Just add a tablespoon of this instead of the spices.

How To Make The Coronation Chicken

Melt the butter in a saucepan and soften the onion and apple.
Add the bought curry paste or ingredients listed above. Cook for about 5 minutes until the paste has cooked out.
Add the wine, jam and saltanas and cook to reduce the liquid by nearly half. (Think about the consistency you want the Coronation chicken to be when the mayonnaise and yogurt are added)
Leave the sauce to cool completely then add the shredded chicken, mayonnaise / crème fraiche and season to taste.

The Coronation Chicken is ideally made at least 4 hours before you want to eat it, this gives the flavors time to infuse.

Leftover turkey from Christmas or Thanksgiving

will work equally as well with this recipe!
