About Cortado Coffee

 

A cortado is an espresso "cut" (from the Spanish and Portuguese cortar) with a small amount of warm milk to reduce the acidity. The ratio of milk is between 1:1 - 1:2, and the milk is added after the espresso. The steamed milk hasn't much foam, but many baristas make some micro foam to make latte art. It is popular in both Spain and Portugal, as well as throughout Latin America, where it is drunk in the afternoon. In Cuba, it is known as a cortadito, and in Catalan it's called a tallat. It's usually served in a special glass, often with a metal ring base and a metal wire handle. There are several variations, including cortado condensada (espresso with condensed milk) and leche y leche (with condensed milk and cream on top).

How to Make a Cortado Coffee (Caffè Cortado) 

The Spanish cortado (cortado is Spanish for shortened or shorn) is an espresso with little milk, i.e. somewhat more than the amount in an espresso macchiato. The cortado is usually served along with whisked milk in 60-ml glasses. However, there are also innumerable local variations (e.g. involving other vessels such as small cups or other ingredients such as condensed milk).

Preparation

7.5 - 8.5 g of finely ground coffee beans (espresso roast)

25 - 30 ml of hot water (90° - 95° C)

30 ml of milk foam

Preparation

Pour the espresso into the glass and top off with milk foam.

However a cortado is made, it is important to distinguish it from the Italian caffe macchiato, which is an espresso with a small amount of foam/steamed milk added. The cortado should always be served in a 150-200 ml (5-7 fl oz) glass and the milk should only be steamed; maybe a little foam settles to the top but the essence of the drink must be steamed milk. Distinguished from American variation of cafe au lait, which is a regular coffee base and warm milk, cortado is made with espresso and steamed milk.

i drink something called espresso machiato. i think it is similar. i call it a Sao Paolo though because my friend from Brazil introduced me to it. He says that is how it is drunk there.

The Best Espresso Machine 

This is my favorite Espresso Machine. I have had it for a couple of years and I still it it. Not only does it make great espresso, it is also one of the best looking machines at a great price.

Housed in heavy-duty die-cast stainless steel, this attractive espresso machine features a 15-bar Italian-made pump and a ThermoBlock heating system that maintains water at an ideal 204 degrees F during extraction. Prior to extraction, the unique 15-bar Triple Prime pump automatically releases three bursts of hot water in the filter head, causing the ground coffee or espresso pod to expand. This increases pressure, allowing the machine to extract more crema, giving the coffee a rich, smooth texture and taste. The machine's fully die-cast selector dial enables simple switching between espresso, steam, and hot water. When turned to the left, users can alternate between hot water and steam using the illuminating solid-steel buttons. The right position gives manual control of the espresso-making process.

Mounted on a swivel ball for easy maneuverability, the unit's stainless-steel steam wand produces continuous dry steam for barista-style milk and froth. The wand also dispenses hot water on demand for tea and other hot beverages. Included are single (7 gram), double (14 gram), and pod filters. Each solid stainless-steel filter incorporates Breville's unique dual-wall crema technology, which produces a back pressure inside the head that, together with the Triple-Prime pump, extracts more flavor and texture from the coffee. With a full 4-1/2-inch clearance, the machine accommodates large cups and travel mugs, making it ideal not just for espresso, but also americano, cappuccino, and cafe latte. The 75-ounce removable illuminated water tank produces 50 single shots of espresso before refilling, and is conveniently accessible from both the front and the rear of the unit. Other useful details include a unique auto-purge function, a 72-square-inch solid-steel cup-warming tray, a large 1-liter drip tray with "full" indicator, cord storage, a patented power-assist cord, and a concealed accessory storage compartment.
