Cowboy Cookies Recipe
Ye-Hah ! These cookies are the best !
I am not sure just why they are called "Cowboy" Cookies, maybe it is because they have so many different ingredients thrown in together but I do know they are great tasting!
So gather your group around and enjoy !
This recipe makes about 4 dozen which sounds like alot but they are so good they won't last long!

1 cup vegetable shortening--OR--
(1/2 pound--2 sticks) butter softened
1 cup firmly packed brown sugar
1 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
2 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt (optional)
1/4 teaspoon baking powder
2 cups Quaker Oats (quick or old fashioned, uncooked)
2 cups (12 ounces) Nestle Toll House Semi-Sweet Chocolate Morsels
1 cup chopped nuts
1 cup shredded coconut
1 cup raisins

Heat oven to 350 degrees.
In large bowl, beat shortening (or butter) and sugars until creamy.
Add eggs and vanilla; beat well.
Add combined flour, baking soda, salt and baking powder, mix well.
Add oats, chocolate morsels, nuts, coconut and raisins, mix well.
Drop dough by rounded tablespoonfuls onto ungreased cookie sheets.
Bake 10 to 12 minutes or until light golden brown.
Cool 2 minutes on cookie sheets, remove to wire rack.
Cool completely. Store lightly covered.
Makes 4 dozen

I used butter and pecans as my nuts. I substituted dried cranberries (Craisins) for the raisins.There was such alot of dough that I baked a batch of 24 and then froze a batch of 24 (unbaked).
However, they went so fast that I had to go back and bake up the 24 I had frozen. My co-workers loved them and couldn't stop eating them ! They kept asking me when I am going to bring some more.
I think next time I make these I am going to try substituting a 1/2 cup peanut butter for a 1/2 of the butter. I think they might even be more tasty that way !
