I love crackers, and I know a good cracker when I see one. Whole grain crackers are healthy foods! The fabulous Doctor Kracker krackers are organic crackers made from whole grain. They're also called Dr Kracker flatbread. We will discuss this great kracker created by George Eckrich in this lens.

The perfect cracker - developed by a German baker
Ladies and Gentlemen!May I introduce to you - the Doctor! Doctor Kracker, that is.
It was in 1997, in Schwabach, Germany, when Dr. Klaus Karg began experimenting with cracker recipes, right in his own grandfather's bakery. His goal was to bridge the gap between austere Swedish flat breads and flavorful specialty breads. Through a long period of trial, error, and inspiration he created several flavor combinations such as Emmental Cheese Pumpkin Seed, Seeded Spelt, and Klassic 3-Seed Krackers.
That same year, Austin, TX master baker George Eckrich set out on a mission of his own: to find the most wholesome cracker of the Old World and to bring it back to his homeland, the good old US of A. This quest ultimately sent him to Germany, where a mutual friend introduced him to Dr. Karg, who was immediately impressed with George's trustworthiness and enthusiasm. A partnership was formed.


The company Dr. Kracker was founded in Dallas, Texas in 2003 by George Eckrich, Dr. Klaus Karg, Carsten Kruse, and a fourth partner, Danny Kelly, an expert in special bakery equipment.
In 2007, Dr. Karg sold his interest in the company to George, Carsten, and Danny. Today the company employs 25 people all committed to the same mission: to make the best-tasting and most nourishing crackers possible.
What's in a Kracker?
Is it wholesome? Organic? No Trans Fats? What, what, what?
Because Krackers are made with organically grown cereal grains, whole, mineral-rich bran, and organic seeds - aside from being stupendously delicious, they're also an excellent source of fiber, protein, Omega-3 essential fatty acids, vitamins and iron.

Graham
Made with organic spelt flour, oats, and bran, organic butter, and sweetened with organic raw sugar and organic molasses. They're an excellent lunch box treat and after school snack. Loved by kids of all ages, and absolutely adored by grownups.


Klassic 3 Seed
In Germany, flax, sunflower, and sesame seeds are a classic mix for crusty breakfast rolls. The Kracker version of this old-world staple, with its distinct, nutty flax flavor, is an excellent base for nut butters, cheeses, avocado, and deli meats.


Pumpkin Seed Cheese
They toast this cracker while it's baking to coax the "wow" out of those delicious organic pumpkin seeds, and to get that the most out of that unique, extra-crispy toasted cheddar flavor. Absolutely delicious.


Seeded Spelt
Rich, buttery organic sunflower seeds blend fantastically with nutty, earthy organic sesame seeds. Organic spelt flour provides a slightly sweeter flavor than usual wheat flour, making this extra crisp cracker especially delicious all by itself or (George says) with peanut and almond butters, jam or marmalade.


Seedlander
The Seedlander Kracker is baked with a specially milled, 100% whole grain organic spelt flour, combined with organic pumpkin seeds, millet, sesame, flax, and poppy seeds. Its sturdy texture and nutty, slightly sweet flavor make it the perfect cracker for cheese and fruit plates and creamy dips and spreads.


Sunflower Cheese
The warm, nutty flavor of organic sunflower seeds are an excellent foil for sharp cheddar cheese in this crispy, crunchy spelt flour cracker. Fantastic with creamy cheese spreads, whole grain mustard, avocado, and tangy tampanades. An excellent alternative to croutons in salads!

I'm glad you asked: What is Spelt?
What is Spelt? Spelt is a variety of wheat that is often known as the ancient grain. Ancient grains and alternatives to wheat are the "gotta have" grains in the market place these days. Although a variety of wheat, spelt does provide a real dietary alternative to modern bread wheats. When spelt mutated into the modern bread wheats, its protein molecule increased in size, and this larger size apparently causes a sensitivity issue with 20 percent of the population. This group may suffer from headaches, bloating, discomfort and in extreme cases, diarrhea. Celiac disease must avoid all wheat, spelt included, since it does contain gluten, but customer with wheat sensitivity can enjoy spelt. Dr. Kracker bakes 5 flavors of spelt, and Dr Kracker's artisan approach to baking makes Dr. K the premier baker of whole grain spelt foods.

In recommending Dr. Kracker, the key points that customers are looking for and finding in Dr. Kracker are: 5 grams or more of protein in each serving, 4 grams or better of fiber, flaxseeds with their Omega 3 fatty acids and their antioxidant properties and an over- the-top crunch and flavor.
One of the best combos with Dr. Kracker is hummus. Hummus is mainly chickpeas (garbanzo beans), tahini (ground sesame seeds), garlic, lemon juice, maybe olive oil and spices. The singer/guitarist/co-founder of the legendary punk rock band Half Japanese, Jad has collaborated with Yo La Tengo, Teenage Fanclub and Daniel Johnston. He is also a prolific visual artist; his paper cuttings and drawings have been shown in galleries in NYC, Tokyo, Berlin, London, San Francisco, and his hometown of Austin, Texas. A book of Jad's artwork, "Blue Skies and Monsters" was published in 2006 by Map.
When Dr. Kracker friend and freelance writer Madeleine Berenson had the idea for this video, Jad Fair immediately came to mind as the one to bring it to life. And that he did!

1 - 7 oz can of salmon
1 - 15 oz cannellini beans
4 oz sun dried tomatoes in oil
5 tbsp fresh squeezed lemon juice (one large lemon)
half cup finely chopped red onion
quarter cup black sesame seeds
half tsp black pepper
quarter tsp sea salt
Optional: quarter cup chopped fresh dill.
Blend all together; chill. Serve with:

Here's your prescription!
1 can of chickpeas, drained
juice of half a lemon
2 tbsp of Veganise or other mayo
half tsp or more of kelp powder (for the fishy taste)
half tsp of garlic or onion powder
a couple of stalks of celery, diced
perhaps a little diced raw onion
In a food processor or with a potato masher, mash the chickpeas until fairly smooth, then mix in other ingredients. Enjoy it in a sandwich or spread it on a Dr. Kracker flatbread!

Always Trust A Doctor In Tie Dyes!

Our moms always told us never to accept food from strangers. Working in a store handing out samples of Dr. Kracker, I was wearing my tie dye t-shirt (courtesy of Doug at the Sunset Valley Farmers Market in Austin). The colors make me more noticeable and they make shoppers smile. A man in his late 20's passed by the table and he told me his Mom's words of wisdom: "if you see someone in a tie dyed t-shirt handing something to eat, don't be afraid to try some!" Now that is a blessing I can identify with, and I'd like to meet his Mom!
