Making Creamy Cucumber Salad

Whenever I Don't Have Time to Make a Salad, I Make Creamy Cucumber Salad

During the late summer, I usually have the few ingredients needed.

You will need cucumbers -- one large long green one or two or three lemon cucumbers, for each two people. Growing your own is, of course, best, but use whatever you have handy. Lemon cucumbers are especially tasty and easy to grow. You will also need plain yogurt, some fresh garlic, and some onion soup mix. Since I often want to use just a bit of a dry soup or salad dressing or taco seasoning mix, I keep a jar in the cupboard to keep my partially used packages in. That way they stay fresh in the covered jar until the next time I need to use them.

Anyone who cooks from scratch really needs this.

If you use fresh garlic in your recipes, I don't see how you can get by without a high quality garlic press. I have one I especially like and a few I don't like all that much. My favorite is very much like this one. The important thing for me is it must actually completely crush the garlic. One I have looks almost like the other, but it doesn't do the job as well. Maybe it's just too old and has worn out, but it also may just be of lower quality, since I don't see how that design could wear out. You'll see mine in one of the pictures. I have another one I got because it was supposed to be easy to clean. The garlic basket was removable for cleaning. It was easy to clean, but it didn't crush the garlic very well, so I went back to my old one. I try to clean it right after I use it so the residue doesn't stick and dry out. I find it cleans easily with an old tooth brush I keep handy near the sink.

This garlic press is a tool I use almost daily. In a pinch when I'm away from home and don't have it, I will try mincing with a knife, but I'm sure glad to get back home where I have the right tool for the job.

This is a high quality garlic press with an almost perfect rating on Amazon. It will mince even unpeeled cloves of garlic -- a handy feature. The mincing head flicks open for easy cleaning, and it takes minimal pressure to press the garlic -- a great feature if you are prone to arthritis. You can also hang this near your work area to keep it handy. Made in Germany, it is dishwasher safe, and it has a lifetime warranty against defects. If I needed to replace my garlic press, this is the one I would pick. You might prefer one of the others amazon features, but I don't recommend the removable basket.

While you're on Amazon, you also might want to pick up a quality peeler. I have had several peelers over the years that just don't work. This is another tool it pays to not skimp on.

Better put an apron on before you start making Creamy Cucumber Salad

First make the creamy salad dressing.

This will take about three minutes if you have everything out.

For every two people (or large cucumber or equivalent lemon cucumbers), use about 3/4 cup plain yogurt. Put it in the serving dish. For every 3/4 C of yogurt, add about 1/2 T dry onion soup mix. Depending upon your taste, add one clove of minced garlic per 3/4 C of yogurt. (I normally find one clove is enough for at least two portions (1 1/2 cups of yogurt). Mix this well until you get most of the lumps out of the onion soup mix. Let stand while you cut the cucumbers. If you aren't a fan of raw garlic, you can skip it and use a bit more onion soup mix, but don't overdo it. A little goes a long way.

(I should mention that I don't usually bother to measure any of these ingredients. I just put in two heaping large flatware tablespoons of garlic in the bowl for every large cucumber and dump the onion soup mix in to taste. I measured this time for your benefit. )

Now slice the cucumbers.

I like to cut them into bite-size pieces.

If you prefer them sliced, be my guest. You're the one whose going to eat them. I just think they are easier to eat in bite-size chunks. When you finish cutting them, put them in the dish with the dressing and mix well until the cucumber pieces are evenly covered with dressing. Put in the refrigerator until you are ready to serve. It's best if it sits a couple of hours, but I rarely let it sit that long here because I'm always in a hurry. Stir it again just before serving.
