My Deliciously Creamy Scalloped Potatoes Recipe

The Best-Ever Creamy Scalloped Potatoes Recipe is Umm, Umm, Good! These potatoes are exactly what I think of when I think of comfort food and they are soooo delicious. My sister-in-law quite likes them and she, believe it or not, does not like scalloped potatoes! These ones are rich and it must be the presence of these extra special ingredients that makes them tasty and different to her.

I have been making these scalloped potatoes for years...since I discovered the recipe in a Parents Magazine in April of 1993. My family loves it as have all our guests to whom we have served it. My potato-loving son has always loved it. My other son, who does not love potatoes, always opted for the homemade country seed bread instead of the potatoes...until recently when he has discovered he has a taste for this delicious recipe, too.

The Best-Ever Scalloped Potatoes are a perfect accompaniment to your Easter Dinner, New Year's Dinner, Christmas Dinner or any special occasion meal. We always serve them with The Best-Ever Glazed Baked Ham. We do tend to reserve this recipe for special occasions because of its richness but there is no reason you could not prepare this recipe for creamy potatoes on a more regular basis!

The Best-Ever Creamy Scalloped Potatoes Recipe

Serves 8 to 10 people

There is some preparation work in peeling and slicing the vegetables, but otherwise this is a pretty simple recipe.

Ingredients:

1 medium onion chopped
13 oz homemade chicken broth or one can if homemade is not available
1 cup of whipping cream
1 bay leaf
1 tsp salt
1/8 tsp pepper
1/4 cup flour
6 large potatoes peeled or unpeeled (about 3 pounds)

Directions:
  • Heat the oven to 325 degrees.
  • Grease a 13 by 9 inch pan.
  • Mix together the onion, broth, cream, bay leaf, flour, salt and pepper in a bowl.
  • Wash the potatoes and make sure they are somewhat dry.
  • Slice potatoes into 1/4 inch slices and arrange them in your pan.
  • Add broth mix to the potatoes.
  • Cover and bake for 45 minutes.
  • Remove cover, give them a little stir and bake the potatoes for 45 minutes longer.

Oxo Good Grips Peeler

A top-rated vegetable peeler makes preparing the potatoes easy.

This Amazon's bestselling vegetable peeler PLUS it has received more five-star reviews than any other vegetable peeler available on Amazon. In my opinion, that makes it a pretty darn good peeler. Featuring extra-hard stainless steel blade which will stay sharp but can even be replaced by an OXO Peeler Bade Replacement Cartridge.

Amazon customer Grace Doll is correct when she says that the $10 or so that this peeler costs is a small investment for something that is so useful. She even goes so far as to suggest that you will wonder why you waited so long to buy a GOOD potato peeler.

My Mother-in-Law always matched the correct type of potatoes the the method that she was preparing them. I have always used whatever I have on hand except, that is, for this recipe. For this recipe, I go out of my way to buy Yukon Gold potatoes. I think they are perfect for this recipe and no others will do!

SHORTCUT:

I do not believe you should make this recipe ahead of time. However, on the day of your meal you could prepare the potatoes and soak them in a bowl of water and you could prepare the rest of the ingredients and store them in the fridge.

Mashed potatoes rate high on most "comfort food" lists, and I'm all for them--anytime, anywhere, any season. But the crispy, cheesy love that comes from baking simple sliced spuds really speaks to me. I adore the textures and flavors, and they remind me of holiday meals with the people I love around a big, festive table.
