Atlantic Croaker 

Atlantic Croaker or "hardhead" are popular saltwater fish common along the mid-Atlantic region and Gulf Coast of the USA. They are known to have wild population fluctuations.

The fish get their names because of the "croaking" noise the make when removed from the water. Croakers are hard fighters and prolific feeders. They are caught on a variety of baits and lures.

Croaker are a popular fish due to their hardy nature, acessibility and prolific numbers. They are among the first fish to be caught in the spring and are caught over a wide range of habitats. Along much of their range, croaker can be caught from piers, jetties, inlets, in bays and from the surf.

Croaker baits include shrimp, crabs, squid, cut fish, bloodworms and more. Anglers also have excellent success using artificial bait products such as Fishbites bait strips and Berkley Gulp products.

In addition to cut baits, croaker are caught on a variety of jigs and other saltwater lures. They can also be caught in in the shallows and grassbeds using fly fishing gear.

Croaker Recipes 

Croakers with Herb Mayonnaise

1/2 cup mayonnaise
1/4 cup chopped chives
1/4 cup chopped parsley
1 1/2 tablespoons lemon juice
1 teaspoon chopped lemon zest
1/4 teaspoon kosher salt
dash of Tabasco sauce
1 -1 1/5 pounds Virginia croaker fillets

Directions
In a small mixing bowl, whisk together mayonnaise, chives, parsley, lemon juice, zest, salt and Tabasco sauce. Transfer half of the mixture into a separate bowl, cover, refrigerate and set aside.

Heat a large nonstick pan or griddle over medium-high heat. Brush croaker fillets with remaining herb mayonnaise. Place each piece (coated side down) into the preheated pan, and cook for 2-3 minutes until golden. Turn and brown on remaining side for another 1-2 minutes.

Transfer cooked fillets onto serving plate and top each portion with approximately 1 1/2 tablespoons of reserved herb mayonnaise. Serves 4.

Marine recreational anglers caught more than 468 million fish in 2007,
down slightly from last year's historic high of 475 million fish, but
still the second highest recreational catch total in the last ten
years. The overall number of fish caught and kept also declined
slightly, from 214 million to 196 million fish, according to NOAA
Fisheries Service.

The 2007 data demonstrates a widespread turn toward "catch and
release" among recreational anglers. While anglers are catching about
27 percent more fish than a decade ago, they are also releasing more
fish than they keep. Of the 468 million fish caught by anglers in
2007, 272 million or 58 percent were released alive. The percentage of
fish released into the environment has increased steadily from about
51 percent in 1993.

Spotted seatrout was the most popular catch among marine recreational
anglers. The species is caught in the Gulf of Mexico and the south
Atlantic regions, which have the highest combined concentration of
saltwater anglers in the nation. The top catches in other regions were
lane snapper (Caribbean), striped bass (North Atlantic), Atlantic
croaker (Mid-Atlantic), chub mackerel (Pacific), black rockfish (
Pacific Northwest), and bigeye scad (Western Pacific).
