Crock Pot - My Favorites
Over the years, I have found some easy crock pot recipesI never have been a fancy cook. I do, however, know how to cook "country", especially Southern Country Cooking. I like foods that do not need a lot of attention -- time savers! As a newlywed, I would carefully string beans, add some fatback, and let them "cook down" 2 or 3 times! Wow! Those were delish! I rarely use fatback anymore, but in the summer, if I can get fresh beans, I still love to cook 'em down! I just use a couple of boullion cubes instead of the fatback.
In the meantime, year-round, green beans in the crock pot are a great tasting and fast substitute. Of course a pot roast in a crock pot never fails. And Barbeque from your crockpot tastes like the best southern barbeque joint in the south!

Green Beans in the Crockpot
Cooking Southern
Our stepmother taught me how to make canned beans taste like fresh. Over the years, I have modified her ideas -- and now this is how I do Southern Green Beans in the crockpot!Open 3 or 4 cans of DelMonte Whole Green Beans. Pour off the juice. Put the beans into the crockpot.
Add about 1/4 onion, chopped.
Add salt, pepper to taste.
Add 2 beef boullion cubes.
Add a few shakes of Cavender's. (I put Cavender's on just about everything!)
Add 1/2 tsp of sugar
Add a cup of water. Watch your beans! If you are going to be away from home all day, add more water.
If you use too much water, your green beans will not be tasty. If you use too little water, your green beans may scorch and not taste good. You do need to experiment one day when you are going to be home. All crockpots are different - as are all cooks. Use as little water as possible to retain flavors.
Cook 3 or 4 hours in crockpot on low heat. Add peeled small red potatoes and cook an hour more. Yummy!

Southern Cooking Recipe
Sister Betty browns her chuck roasts in an iron skillet - seals in flavors, she says. And hers are always better than mine, so she is most probably right, or she has a better butcher!Place browned chuck roast in crockpot.
Add onions, bell pepper, small carrots.
Add salt, pepper, Cavender's to taste
Cook 4 or 5 hours. Add potatoes the final hour.
Note: you may need a little water. Do watch your roast the first time you try this. Adjust according to your tastes and your crockpot.

Bar-B-Que in the Crockpot
Southern Country BBQ is the best!
Remove from crock pot and allow to cool.
At this point, I remove any fat, gristle, etc.
Chop or shred. Add Sweet Baby Ray's sauce. You will probably use most of one bottle.
Mix and return to crock pot. Cook slowly for an hour or more.
Absolutely positively delicious! You will be amazed!

Great Lens. I am the Crockpot Queen. I just make my recipes as I go. My family always wants names for the meals so they can request them. I told them.... "They are the following: Slop in the Pot 1, Slop in the Pot 2, .....". They did not think that was funny. I only cook one fancy meal a year, on Christmas Eve.

Yes, I very much enjoy using the crockpot! It's great for taking food to a potluck dinner, because you can plug your crockpot in there and keep the food warm until everyone's ready to eat! It's also great for days when we have to be out of the house all afternoon, or family members need to eat at different times!

When I was a single working mother, I don't know that we'd have survived without my trusty crock pot - I was soooooo tired when I got home and got the kids picked up from the sitter, there's no way we'd have eaten as healthy as we did with crock pot meals. I quit using it when I was on Weight Watchers the first time -- back in the 1970's! lol Nothing on earth tastes that good, but oh so fattening! Wikipedia says "Fatback is the layer of fat along the back of a pig, used as a cut of meat. It is often used to make lard. Fatback is a traditional part of southern U.S. cuisine and soul food, where it is used for cracklings or cracklins, and to flavor stewed vegetables such as greens and black-eyed peas. "

Ah, memories! Yes, that Rival crockpot -- I think for all of us newlyweds it came as a wedding gift -- I know my first one did. Probably from one of hubby's relatives. When I do cook, which is rarely, I like to throw some things into the crock pot and let it simmer. With a crock pot and a few ingredients, you can turn out a great meal without a lot of work.

I love my crockpot but I don't use it too often. I guess it's that whole plan ahead thing. On a typical day, my hubby will come home from work and ask what's for dinner and I say "I don't know". And, then I go an whip something up that's usually not as good as when I put some time and effort into it. But, I love how with a crockpot, you can throw everything in and have a delicious meal at the end of the day - I need to get in to the habit of using it that's all and thanks Joan for some great ideas on what to do with the darn thing. BTW - what's Cavender's?? I'm not sure that we can get that here in Canada but if you let me know what it is - I might be able to find a substitute here.

Oh, my crockpot is an old one, but a new one is NOT on my list of wants. In fact, Joan, mine may well be a hand-me-down from you! I love it! Absolutely will not do a pot roast any other way! (Yes, searing in the black skillet..and sprinkling with garlic salt are my secrets as well as having a great butcher who cuts the perfect chuck roast!) Thanks for a fun lens! Betty

You know I am known for my Blackened Green Beans. No, they aren't blackened with seasoning. They are blackened from burning. I just have no patience and get busy doing something else. Therefore, I think I will cook them in the crockpot the next time. Won't my hubby be surprised! Great lens.
