Crock Pot - My Favorites

Over the years, I have found some easy crock pot recipesI never have been a fancy cook. I do, however, know how to cook "country", especially Southern Country Cooking. I like foods that do not need a lot of attention -- time savers! As a newlywed, I would carefully string beans, add some fatback, and let them "cook down" 2 or 3 times! Wow! Those were delish! I rarely use fatback anymore, but in the summer, if I can get fresh beans, I still love to cook 'em down! I just use a couple of boullion cubes instead of the fatback.

In the meantime, year-round, green beans in the crock pot are a great tasting and fast substitute. Of course a pot roast in a crock pot never fails. And Barbeque from your crockpot tastes like the best southern barbeque joint in the south!

Green Beans in the Crockpot 

Cooking Southern

Our stepmother taught me how to make canned beans taste like fresh. Over the years, I have modified her ideas -- and now this is how I do Southern Green Beans in the crockpot!

Open 3 or 4 cans of DelMonte Whole Green Beans. Pour off the juice. Put the beans into the crockpot.
Add about 1/4 onion, chopped.
Add salt, pepper to taste.
Add 2 beef boullion cubes.
Add a few shakes of Cavender's. (I put Cavender's on just about everything!)
Add 1/2 tsp of sugar
Add a cup of water. Watch your beans! If you are going to be away from home all day, add more water.

If you use too much water, your green beans will not be tasty. If you use too little water, your green beans may scorch and not taste good. You do need to experiment one day when you are going to be home. All crockpots are different - as are all cooks. Use as little water as possible to retain flavors.

Cook 3 or 4 hours in crockpot on low heat. Add peeled small red potatoes and cook an hour more. Yummy!

Southern Roast Beef with Veggies 

Southern Cooking Recipe

Sister Betty browns her chuck roasts in an iron skillet - seals in flavors, she says. And hers are always better than mine, so she is most probably right, or she has a better butcher!

Place browned chuck roast in crockpot.
Add onions, bell pepper, small carrots.
Add salt, pepper, Cavender's to taste
Cook 4 or 5 hours. Add potatoes the final hour.

Note: you may need a little water. Do watch your roast the first time you try this. Adjust according to your tastes and your crockpot.

Bar-B-Que in the Crockpot 

Southern Country BBQ is the best!

Place Boston Butt roast in the crock pot. Season to taste. Cook slowly 6 hours or more.

Remove from crock pot and allow to cool.
At this point, I remove any fat, gristle, etc.

Chop or shred. Add Sweet Baby Ray's sauce. You will probably use most of one bottle.
Mix and return to crock pot. Cook slowly for an hour or more.

Absolutely positively delicious! You will be amazed!

I love my crockpot but I don't use it too often. I guess it's that whole plan ahead thing. On a typical day, my hubby will come home from work and ask what's for dinner and I say "I don't know". And, then I go an whip something up that's usually not as good as when I put some time and effort into it. But, I love how with a crockpot, you can throw everything in and have a delicious meal at the end of the day - I need to get in to the habit of using it that's all and thanks Joan for some great ideas on what to do with the darn thing. BTW - what's Cavender's?? I'm not sure that we can get that here in Canada but if you let me know what it is - I might be able to find a substitute here.
