Easy Crock Pot Pumpkin Pie
Are you searching for an easy, warm dessert that you can make in the crock pot? Make sure that you give this one a try at least once! We did and have enjoyed it many times because it is easy and does not take up any oven space!
Do you love to use your Crock Pot? We use ours every week all year round. It is great for making soups, stews and roasting chickens. But our favorite thing to make in our Crock Pot is this dessert. Warm pumpkin pie.... YUM!
This recipe is very easy to make and perfect for a cool fall dessert~ and especially on Halloween night! You can add everything to your Crock Pot before all the trick-or -treating starts, and serve it up when everyone gets back home all tired from collecting candy. (hint: serve this up to your little ghosts and goblins while you check and make sure that all their Halloween candy is safe ).

Easy Crock Pot Pumpkin Pie
Super Easy Crock Pot Pumpkin Pie Ingredients
~~1 (15 ounce) can solid pack pumpkin
~~1 (12 ounce) can evaporated milk
~~3/4 cup sugar
~~ 1/2 cup biscuit/baking mix
~~ 2 eggs, beaten
~~ 2 tablespoons butter or margarine, melted
~~ 2 1/2 teaspoons pumpkin pie spice
~~ 2 teaspoons vanilla extract
softly whipped cream or vanilla ice cream - optional
(we love it with toasted chopped pecans too)

1. Mix together in a bowl all the ingredients except for the optional whipped cream or ice cream. Carefully pour into your crock pot that has been coated with non-stick cooking spray. Cover and cook on low for 4-6 hours or until a thermometer reads 160 degrees F.
Serve in bowls with whipped cream, ice cream or chopped pecans
