Stuffed Peppers with a Mexican Flair, Quick and Easy to Prepare, Ready When You Are

 

Love stuffed peppers? Love Mexican? Love your slow cooker? Then I have the perfect recipe for you.

This Mexican-style stuffed pepper dish is perfect for a family meal, great comfort food, and even looks pretty when you serve it so would be great for anytime, from a quick weeknight dinner to a more relaxed company meal.

Feel free to spice it up or keep it toned down, your choice. Use a larger slow cooker and double the recipe for more servings.

Easy Crockpot Stuffed Peppers Mexican Style - Ingredients

Easy Crockpot Stuffed Peppers Mexican Style

(Makes 4 servings)

* 2 red (or green or yellow) bell peppers
* 1 pound lean ground beef
* about half of a medium onion, diced
* 1 cup frozen cut corn, thawed (or use a can of Mexicorn, drained)
* 1 can enchilada sauce
* 1 tsp to 1 tbsp chili powder, to taste (optional)

How to Prepare this Crockpot Stuffed Peppers Recipe 

Here's what I do when cooking for two.


Wash the peppers and cut them in half; remove seeds and the white membranes.

Mix the ground beef, onion, corn, and seasoning together. Use the mixture to stuff the peppers, then place in the crockpot or slow cooker, setting them upright. Pour the can of enchilada sauce over the peppers.

Cover and cook until done. I have a small slow cooker, so I let them cook for about three hours on high then reduce the temperature to low until we are ready to eat, or cook on low for about six hours. Of course you can increase the number of peppers and use a larger crockpot or slow cooker to feed more people. This was more than enough for the two of us.

With the enchilada sauce I expected this to be rather spicy, so the first time I prepared this, I did not add spice to the meat. We were surprised that it turned out rather mild. Depending on your family's preference, add chili powder to taste.
