Easy Crockpot Stuffed Peppers Mexican Style - Ingredients

Make a note on your grocery list so you don't forget!

Easy Crockpot Stuffed Peppers Mexican Style

(Makes 4 servings)

* 2 red (or green or yellow) bell peppers
* 1 pound lean ground beef
* about half of a medium onion, diced
* 1 cup frozen cut corn, thawed (or use a can of Mexicorn, drained)
* 1 can enchilada sauce
* 1 tsp to 1 tbsp chili powder, to taste (optional)

How to Prepare this Crockpot Stuffed Peppers Recipe

Here's what I do when cooking for two.

Method

Wash the peppers and cut them in half; remove seeds and the white membranes.

Mix the ground beef, onion, corn, and seasoning together. Use the mixture to stuff the peppers, then place in the crockpot or slow cooker, setting them upright. Pour the can of enchilada sauce over the peppers.

Cover and cook until done. I have a small slow cooker, so I let them cook for about three hours on high then reduce the temperature to low until we are ready to eat, or cook on low for about six hours. Of course you can increase the number of peppers and use a larger crockpot or slow cooker to feed more people. This was more than enough for the two of us.

With the enchilada sauce I expected this to be rather spicy, so the first time I prepared this, I did not add spice to the meat. We were surprised that it turned out rather mild. Depending on your family's preference, add chili powder to taste.

When you prepare this recipe . . .

  • Feel free to vary ingredients to suit your family.
  • Spice it up or spice it down!
  • Use a larger slow cooker and double the recipe to feed more folks.

Crockpots and Slow Cookers

What's the difference?

"Crockpot" is a trademark and the name of the slow cookers made by Rival. "Slow cooker" is the generic name.
