  • 1 Head Garlic Crushed with salt
  • All Purpose Seasoning
  • Oregano to taste
  • Juice and Pulp of 8-10 Limes

  1. Mix all ingredients together and let sit for at least 30 minutes.
  2. Coat fish with all the marinade.

  • 1lb Cleaned Black Beans
  • 1 Diced Green or Red Pepper
  • 10-12 cloves garlic
  • 1 Chopped Onion
  • Cumin
  • Salt

  1. Soak beans for 1 hour and cook for 30 minutes in a pressure cooker (Optional-add ham hock)
  2. (Make the Sofrito) Sauté the onions, peppers, garlic and cumin in oil.
  3. When beans are cooked add the mixture to the beans and simmer for 5 minutes.
  4. Serve with steamed rice
