Delicious Valentine Cupcake Pops!
Cake or cupcake pops (also called cake balls) are a simple to make, delicious treat for Valentine's Day that everyone will enjoy! Not only are they easy enough for kids to have fun making, they are versatile since you can change the flavor of the cake, the shell and the decorations to fit any occasion. Making cake pops can be a fun family activity or even made ahead of time while saving the final decorating for a birthday party activity. The possibilities are endless, except for that last yummy step...eating them!

First you're going to need supplies!
Before You Get Ahead of Yourself
check your supplies
The possibilities with cake or cupcake pops are endless, so before your head spins off into outer space with all of the possibilities, let's think about some basic supplies you might want to have on hand before you are elbow-deep in balls of cake...or worse, before you have a house full of kids elbow-deep in balls of cake and then realize you've forgotten something they need! Oh the horror!

- Lollipop Sticks
- Mini-Cookie Cutters
- Chocolate Candy Coating/Bark
- White Chocolate or Colored Candy Coating/Bark
- Sprinkle Candy Decorations
- Waxed or Parchment Paper
- Cookie Sheets
- Melon Baller/Small Ice Cream Scoop (maybe)
- Styrofoam Blocks
- Decorative Clear Treat Bags
- Ribbon
- Valentine Gift Box or Something to put them in(if giving as a gift)
Depending on the type of pops you choose, you may not need both cookie cutters and a mini ice cream scoop, or you may decide you want both if you really don't want to be elbow deep in anything, it's entirely your choice, but you don't want to run out of sprinkles or chocolate candy coating, do you? No, I didn't think so.
Now for the inside cake!
The cake and icing can be made ahead of time or you can even use a box cake mix and ready-made icing instead of making them from scratch and these will turn out just as lovely. If you're planning to make this a fun family activity for your kids or as a birthday party activity, preparing them ahead of time is a must because they need to be chilled in two different steps. To make the most of it, prepare half of them up to the first chilling stage and then half to the second so that the kids will be able to partake in the entire process and then still have some that are finished at the end.
Rich Chocolate Cake
in one bowl no less
- Serves: 2 - 9" round cakes
- Prep Time: 15 minutes
- Total Time: 1 hour

Ingredients
- 2 cups sugar
- 1 3/4 cups flour
- 3/4 cup unsweetened cocoa powder
- 1 1/2 tsps baking soad
- 1 1/2 tsps baking powder
- 1 tsp salt (if desired)
- 2 eggs
- 1 cup milk
- 1/2 cup vegetable oil
- 2 tsps vanilla extract
- 1 cup boiling water
Instructions
- Preheat your oven to 350° F. Then grease two 9" round cake pans.
- In your ONE bowl, stir together all dry ingredients (everything listed above the eggs). Then add in everything EXCEPT the boiling water and mix for about 2 minutes with a mixer on medium. Stir in the boiling water last (batter will be thin).
- Pour half the batter into each pan and place on center rack of preheated oven.
- Bake 30 - 35 minutes until done (test center with a toothpick). Cool in pans for about 10 minutes until cakes can be removed and completed cooled on wire racks.
Buttercream Frosting

- Serves: 2 1/2 cups

Ingredients
- 1 cup unsalted butter (or shortening may be substituted)
- 4 cups confectioner's sugar (aka powdered sugar)
- 1/4 tsp salt (if desired)
- 1 tsp vanilla extract
- 1/4 cup heavy cream
Instructions
- Butter should be at room temperature, so set out ahead of time. Cream butter until fluffy.
- Add sugar to butter (a cup at a time is easiest), creaming together well. Also cream in salt and vanilla.
- Mix in heavy cream until partially mixed and then beat with a mixer at a high speed until the frosting is a fluffy consistency.

The Basic Steps
Remember, you can make any kind of cake you want from chocolate to red velvet to white to yellow to whatever. You can even buy the cake if that's what works best for you. Just make sure your cake is completely cooled before moving on to these steps. The frosting is your call, too. I picked my favorite to include for the recipe but cream cheese frosting seems to be a good choice, too.

1Crumby Cake!
Once the cake is completely cooled it needs to be made into cake crumbs. I know, seems like a waste, right? It won't seem like that for long. The easiest way to make crumbs is to cut it into pieces, toss them into your food processor, and give it a few pulses until you have some crumbs. Just make sure you have cooled the cake or it will not be what you want. You'll want 1 entire pan and 1/4 - 1/2 of the other pan if you use my favorite recipe above or a 9" x 13" if you make a sheet cake.

2The Icing IN the Cake!
Not on the cake, IN the cake! You want to mix in 2 cups of frosting if made from scratch or one store bought can of the frosting of your choice. Do not try to mix it in all at once, but in smaller dollops dotted in several spots. I recommend making the frosting on the spot, not ahead of time, if you're planning to make it from scratch, for the best results and ease of mixing. Mixing with the back of a rounded spatula works well but you may want to use your hands near the end.

3Roll 'em Up, Lay 'em Out!
Now you may choose to use the mini ice cream scoop or melon baller for this step, or just use a spoon to scoop some of the mixture out and roll it into balls that are about 1 & 1/2" (1.5") in size (a little smaller than a golf ball) and place them on a cookie sheet that is lined with wax paper. Cover with foil or plastic wrap and chill in the refrigerator for several hours or the melted chocolate in the next step won't want to stay stuck. You can also flash freeze in the freezer for about 20 minutes.

4Things are Taking Shape!
Wait! They are already in balls, isn't that the shape? If you want cake balls, it is, but not for cupcake balls. To make cupcake balls you need to make the part that would normally be baked in the paper, so roll the ball slightly to elongate it a bit and work one end into a mini cookie cutter, pressing to fill in the shape's edges. You can press against your hand or the wax paper to make the bottom flat. The other side should be rounded to look like the top of the cupcake. Remove the mini cutter and return to the cookie sheet. They need to be covered and returned to the refrigerator for an hour or the freezer about 5 - 10 minutes.
Finishing Up!
Now comes the really fun part! If you're going to do this as a party activity you can have some made ahead of time that are ready for this step so no one must wait yet also let the party guests make some that go into the refrigerator for the first step and also for the second step when the balls are molded into the cupcake shape. Just like the magic that's seen on television when you watch a cooking show and something needs to be chilled or cooked for a long time.

1My Heart is Melting!
Now you need to follow the directions and melt your chocolate that you'll dip the molded ends into. This makes the "paper" part of the cupcake. You can use milk, dark or white chocolate. Don't let it get cold and don't get water in it. Dip the cupcake balls by holding the rounded end and coating the other end with chocolate, then put them back onto a cookie sheet covered with more wax paper with the chocolate coated ends up. Take a lollipop stick, dip the end in the chocolate and then push into the dipped chocolate end before it cools. Push in only as far as the chocolate coating. Let the chocolate cool and set for about 20 minutes.

2Sprinkled with Love!
After the bottom chocolate is cooled the tops can be dipped into an alternate color by carefully holding them by the stick. After coating the tops, immediately decorate them with candy sprinkles, colored sugar, chopped nuts or even chopped chocolate. Then poke them into a piece of florist Styrofoam so they can completely cool.

3Holding the Bag!
Finally, cover with a clear treat bag (or take the time to decorate one while they cool and dry) and secure the bottom with a small twist tie or some pretty pieces of ribbon. Then you can put them in a gift box or fit a cup, glass or basket with some of the Styrofoam and poke a few into that, then cover it with something decorative and give it as a unique and homemade Valentine's Day gift from the heart!

- Real cake - real frosting -earned a Squidoo Angel Blessing from me, ( I think mixes are an abomination) and I may even make it! Honestly - I might just make the cake and the frosting, I don't know if you need to do the pops to get the yumminess going on.
