I personally make very ordinary cupcakes, but the explosion of creativity in the baking community when it comes to these individually sized delights has provoked me to go searching the Columbus Ohio vicinity for the new and delicious cupcake concoctions available.
I will start in my locale- the Northwest side of Columbus and work my way from there. Will also scout Squidoo for the lenses that will enable me to raise the bar on my own cupcake creations.
The search is on for the best tasting, the most original, the wildly delightful. Fancy cupcakes, in other words. Perhaps I may learn to let my inner cupcake express itself in my own kitchen, who knows?

I went out and took my first photo for this lens -at Starbucks. They had cute little bitesize cupcakes. One was a carrot cake cupcake. Tomorrow I go out again to get some photos and then really start to get this lens going.My plan is to go to Whole Foods, where I love to shop, because they have some really gorgeous baked goods... then pop by a bakery and see if they offer anything in the way of exceptional cupcakes in their display windows.

Here's the Recipe for Matcha Green Tea Cupcakes
I like unusual flavors... and the usual chocolate
- Serves: 24 cupcake papers for 24 servings
- Prep Time: 15-20 minutes to put together;bake 22-25 minutes
- Total Time: 45 minutes to an hour
Have you ever tasted ice cream flavored with Matcha Green Tea? It is a divinely subtle flavor, and creates a delicate and beautiful green cupcake with icing. Just the perfect thing to decorate for spring, a wedding, or for Mother's Day.
I've purchased cakes in this flavor from Asian Bakeries, this particular recipe comes from the Matcha tea site.
Ingredients
- 1 cup (2 sticks) unsalted butter
- room temperature
- 2 cups sugar
- 2 large eggs
- 2 large egg yolks
- 3 cups all-purpose flour
- 2 teaspoons baking powder
- 1/8 teaspoon salt
- 1 cup milk
- 2 tablespoons matcha tea
Instructions
For Cupcakes:
* Beat butter on high until soft, about 30 seconds.
* Add sugar. Beat on medium-high until light and fluffy, about 3 minutes.
* Add eggs/egg yolks one at a time, beat for 30 seconds between each.
* Whisk together flour, baking powder, and salt in a bowl. Add to batter and mix to combine.
* Mix matcha in with the milk. Add to the batter and mix until combine.
* Scoop batter into prepared into cupcake papers.
* Bake for 22-25 minutes until a cake tester comes out clean.
Matcha Buttercream Icing:
* 1 stick butter, room temperature
* 2 tablespoons half and half or light cream
* 1 tablespoon matcha powder
* 3 cups powdered sugar, sifted
1. Mix matcha in with the light cream to make a paste.
2. Beat butter briefly, scrape bowl.
3. Add the sifted powdered sugar and matcha paste. Beat until smooth.
Assemble a Layered Cupcake "Bomb" with Ice-Cream
1. Cut rounds of cake to fit in a cupcake paper. Put a round in each cupcake paper.
2. Place a scoop of (insert favorite flavor here)ice cream on top of each round and smooth with the back of a spoon.
3. Place cupcakes in the freezer and chill for 1 hour.
4. Place a second scoop of (another favorite flavor) ice cream on top of each round and smooth with an offset spatula dipped in hot water.
5. Place cupcakes in the freezer and chill for 1 hour.
6. Smooth a thin layer of matcha buttercream over

Oreo Cookie Cupcakes
cookies 'n cream in a cupcake

- Serves: 15 cupcakes
- Prep Time: 40 minutes + bake 17-20 minutes
- Total Time: about an hour
Ingredients
- 3 ounces bittersweet finely chopped chocolate
- 1/3 cup Dutch-processed cocoa
- 3/4 cup hot
- strong-brewed coffee
- 3/4 cup bread flour
- 3/4 cup granulated sugar
- 1/2 teaspoon table salt
- 1/2 teaspoon baking soda
- 6 tablespoons vegetable oil
- 2 large eggs
- 2 teaspoons white vinegar
- 1 teaspoon vanilla extract
- Frosting:
- 2 1/2 cups heavy cream
- 3 1/2 tablespoons sugar
- 6 finely crushed Oreo cookies
- 15 Oreos for the top of each cupcake
Instructions
1. Preheat oven to 350°F and line a muffin pan with cupcake liners.
2. Place chocolate and cocoa in a medium bowl and pour the hot coffee over the mixture. Whisk until smooth and transfer to the refrigerator to cool completely, 20-30 minutes.
3. Whisk flour, sugar, salt, and baking soda together in a medium bowl; set aside. Whisk oil, eggs, vanilla, and vinegar into the cooled chocolate mixture until smooth. Add flour mixture and whisk until batter is smooth.
4. Divide batter evenly among muffin pan cups, filling each 3/4 full. Bake until cupcakes are set and firm to the touch, 17-20 minutes. Allow to cool in pans before frosting.
5. For the frosting, in the bowl of an electric mixer fitted with the whisk attachment, combine the heavy cream and sugar. Beat on medium-high speed until the whipped cream holds stiff peaks. Crush 6 oreo cookies in a food processor. Gently fold in the cookie crumbs with a spatula.
6. Using the decorating piping tip, take the round end and press into the middle of the cupcake to scoop out part of the middle section of each cupcake. Pipe some frosting to fill the middle of each cupcake and then frosting the top of the cupcakes. Garnish with Oreo cookies.
*** Try the variation with an Oreo half buried in the bottom of each cupcake instead of step #6:
"Twist 15 additional Oreos in half and set aside the extra cookies for later. Place the side with cream filling in the bottom of each cupcake liner, cream-side facing up."

Everyone lists the Kitchen Aid Stand Mixer... and I do have one that I use alot, but there are times when a hand mixer is easier and does just as good a job. Cake batters and icings do not need lots of power, they are more conveniently mixed with a smaller hand held mixer. So, for cupcakes and most of the lightweight mixing jobs- why not have a smaller mixer on hand?

The absolute one thing that I need for cupcakes is a good quality muffin pan. I have old ones that got rusty over the years, it makes it so you don't even want to bake, but a lovely solid shiny baking pan is always a joy to cook with.

Fabulous Cupcakes
Devils Food Cupcakes
Food shouldn't be sinful,but sometimes it is tempting

- Serves: 32 cupcakes
No other cupcake is as all American as the Devil's Food flavor. Don't ask me why.
Ingredients
- cupcakes:
- 3/4 cup unsweetened Dutch-process cocoa powder
- 3/4 cup hot water
- 3 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 and 1/4 teaspoons coarse salt
- 1 and 1/2 cups (3 sticks) unsalted butter
- 2 and 1/4 cups sugar
- 4 large eggs room temperature
- 1 tablespoon plus 1 teaspoon pure vanilla extract
- 1 cup sour cream room temperature
- For the frosting:
- 1/4 cup plus 2 tablespoons unsweetened Dutch-process cocoa powder
- 1/4 cup plus 2 tablespoons boiling water
- 1 and 1/2 cups (3 sticks) unsalted butter room temperature
- 1/2 cup confectioners' sugar sifted
- Pinch of salt
- 1 pound semi-sweet chocolate melted and cooled
- Silver dragees
- for garnish
Instructions
1. For the cupcakes: Preheat the oven to 350 degrees.
2. Line standard muffin tins with paper liners.
3. Whisk together the cocoa and hot water until smooth.
4. In another bowl, whisk together the flour, baking soda, baking powder, and salt.
5. Melt butter with sugar in a saucepan over medium-low heat, stirring to combine.
6. Remove from heat, and pour into a mixing bowl.
7. With an electric mixer on medium-low speed, beat until mixture is cooled, 4 to 5 minutes.
8. Add eggs, one at a time, beating until each is incorporated, scraping down the sides of the bowl as needed.
9. Add vanilla, then cocoa mixture, and beat until combined.
10. Reduce mixer speed to low.
11. Add flour mixture in two batches, alternating with the sour cream, and beating until just combined after each.
12. Divide batter evenly among lined cups, filling each three-quarters full.
13. Bake, rotating tins halfway through, until a cake tester inserted in the centers comes out clean, about 20 minutes.
14. Transfer tins to wire racks to cool 15 minutes; turn out cupcakes onto racks and let cool completely.
15. For the frosting: Combine cocoa and the boiling water, stirring until cocoa has dissolved.
16. With an electric mixer on medium-high speed, beat butter, confectioners' sugar, and salt until pale and fluffy.
17. Reduce speed to low.
18. Add melted and cooled chocolate, beating until combined and scraping down the sides of the bowl as needed.
19. Beat in the cocoa mixture.
20. Let sit at room temperature while the cupcakes cool.
21. Pipe as desired onto cupcakes. (I used Wilton tip #1).
22. Decorate with silver dragees.
