Recipe: Curry Chicken Wraps

This is a great, simple, and oh-so-yummy recipe that I've recently perfected (in my mind). In the writing of this curry chicken wraps recipe, however, several more dishes developed out of the basic recipe. They are featured below.

The Ingredients 

1 1/2 lbs chicken, sliced into strips or chunks

2-3 bell peppers (green, yellow, red, etc) sliced into strips or chunks

1 small onion diced or sliced

8 oz sour cream

lemon or lime juice- approx 1 teaspoon

soy sauce- approx 1 Tablespoon

dash of hot sauce

curry powder- approx 2-3 Tablespoons

ginger- approx 1/2 teaspoon

paprika- approx 1/2 teaspoon

garlic powder- approx 1/2 teaspoon

cayenne- approx 1/2 teaspoon

The Directions 

In a large frying pan, pour a little oil, or coat with non-stick spray. Heat pan to medium, and saute bell peppers and onions until mostly cooked.

Add chicken- if raw, cook until thoroughly done, if cooked, cook until heated through.

Add lemon juice, soy sauce, hot sauce, and spices. Stir well. If dish is particularly juicy or watery, cook down until almost dry, then add sour cream and stir well.

Once sauce is thoroughly heated, serve over heated soft tortillas.

Garden Veggie Curry Chicken Wrap 

For a garden veggie wrap, follow the directions above, but add tomatoes to the first step, and spinach to the last step. Eggplant can also be added.

If You Don't Have Sour Cream

A cup of plain or Greek yogurt can be substituted for the sour cream. You could also try condensed (not sweetened) milk, or heavy cream.

What About Sides? 

If you're making a wrap that's heavy on the veggies, you may not feel that you need a side dish- but for protein heavy wraps, it's always good to include something a little healthier with the meal.

While I think fries make a great accompaniment to anything and everything (heck, they even work with mashed potatoes in my opinion!), they're not all that healthy. However, sweet potato fries are packed with nutrients. You can buy them frozen, or cut them up fresh.

If you don't mind using utensils, how about oven roasted baby carrots? Or freshly steamed broccoli with a little olive oil and fresh basil?

Why not try something unique such as Roasted Spicy Garbanzo Beans, mix up a black bean and cilantro side, or even just a simple salad?

Curry Chicken On Rice 

To serve the curry over rice, do not boil down the sauce before adding sour cream. Cut the bell peppers into chunks rather than strips, and add fresh or frozen peas.

Country Curry Chicken On Rice 

For a country flair to the chicken curry, add a small can of corn (or part of a bag of frozen corn), a can of kidney beans, a small can of mushrooms or a handful of chopped fresh, and a small can of V8 before adding sour cream. Don't forget to cook the sauce down a bit before adding the cream.

Curry Chicken As A Main Dish 

Instead of serving on a tortilla or over rice, try adding cooked chunks of potatoes and cauliflower, as well as fresh or frozen (or canned) peas. A can of diced tomatoes can add a nutritional boost.

    I tend to LOVE coconut curry... so I'm going to try your recipe and add some coconut milk. A hint of sweetness with the intensity of the curry, is just heavenly!
