Put that stubborn backyard weed to better use... on your dinner table! Dandelions can be a yummy addition to a fresh salad, or can even be used to make a coffee-like drink. They also can be used in soups and as their own side dish.

There is one major thing that has to happen if you are going to turn this funky weed into a kitchen staple: you have to take care of your garden organically. Anything that gets put on your grass or soil has to be safe for human consumption if you are going to harvest dandelions from your own yard, or you risk making you and your family very sick. It's best that the yard be cared for organically for at least three years before you start to harvest your dandelion greens.
