Danish Wedding Cookies

I remember when my mother used to buy these Danish Wedding Cookies in the box. They never lasted long as even store bought they were too tempting for us. Oh the delicious flavor was almost intoxicating!

Danish wedding cookies made very close to this recipe used to be given as good luck symbols to couples at their wedding. The combination of the walnuts and sugars represented "bumps in the road" and the "sweetness that coats a happy marriage."

Luckily, you don't have to be married or getting married to enjoy these wonderful, mouth watering, cookie confections. You can make them for yourself and enjoy every bite! Remember to bring a napkin!

Ingredients


1 cup all-purpose flour
1 cup granulated sugar
**1/2 cup walnuts, ground
1/2 cup (1 stick) unsalted butter, softened
3 ounces cream cheese, softened
1 teaspoon vanilla extract
1/8 teaspoon almond extract

Confectioners sugar for coating

**Optionally, you can use Almonds or Pecans, if you prefer

Instructions

Preheat oven to 350 degrees.

Use an electric mixer and cream sugar and butter in a large bowl until blended. Add cream cheese, increase speed to high, and beat until light and fluffy. This takes about 2 minutes. Make sure to scrape down sides with spatula occasionally while blending. Beat in vanilla and almond extracts. Gently fold in flour and walnuts and stir until blended.

Lightly flour hands and roll dough into 1-inch balls. Gently press balls flat. Bake on an ungreased cookie sheet until lightly browned and puffy, about 14 to 18 minutes.

Allow the cookies to cool on the pan for about 2 minutes then transfer to a wire rack to cool a little. While cookies are still warm, gently toss them in confectioners sugar. Place them back on the wire rack to cool completely.

    These were my favorite cookies when I was little. Mom would seldom buy them. Now, I don't often buy them, and for the same reason. They disappear the day they are purchased! Blessings!
